I'm from Mexico, to me a flour tortilla on top of another it's called a Sincronizada (synchronized 😆) . We usually put ham, onion tomatoes, jalapeño and Oaxaca cheese (string cheese I guess is called in other places). A quesadilla is made, preferably, with corn tortillas and cheese. But your sweet quesadilla was my favorite.

I have one of those quesadilla makers and I LOVE IT. My only problem is when my tortilla is too small and the cheese goes everywhere!! But I learned if you wipe up the cheese while it is still molten it is easier to clean.

Hey, guys, a mexican over here! If you really want to make a traditional quesadilla, I'd recommend the potato and chorizo stew one, with a lot of Oaxaca cheese, you'll love it. The tortillas you bought are perfect, but to make a traditional quesadilla you'll need the corn tortilla not the flour ones. So you're gonna cut the potato in cubes and boiled them with a little pinch of salt until the center of the potato is soft; you'll drain them and start "cooking" the chorizo in a large, round pan, where you'll combine the potato cubes there and make it a stew until both of the ingredients are fully cooked. It doesn't matter if the potatoes turn into a paste, that's okay. When you have your stew ready, you're gonna put cheese on one side of the tortilla (on one half), the stew and fold the tortilla so it ends in a half-moon-shape, to then put the quesadilla on an other pan until the cheese melts or the tortilla gets to the "brown" spot you want (sorry, don't know how to express the term "dorar" in english). And there you have a quesadilla, hope you can try the real quesadillas cause they're fantastic and delicious.
