My grandmother bequeathed me literally over a thousand church/civic org/local cookbooks when she died a few years back. On the one hand, there are some real gems in there and it's fun to dig one out and look. On the other hand there are some absolute disasters (also some wild racism from the older ones!) and you sometimes wonder how any of our mid-century ancestors survived with a stomach lining at all. This one, with its root vegetables, canned vegetables, dry rice, minced meat? That's working-class food from a place that didn't traditionally have access to a lot of fresh produce. There's something inherently interesting about Keep People Alive food. It's a great little history lesson.

Love this one! Hearing Gabi talk about the tomato soup in a Polish dish kind of reminded me of magic meatballs here in the midwest. Same thing, immigrants making what they new with the ingredients they had handy.

Oh hey, I remember my late father would make this on occasion. My mother never seemed to enjoy it, but it was ... serviceable. I don't remember him ever adding peas, and the potatoes ended up on top in his version. I keep thinking, "man, I oughta make this." Maybe this is a sign from the universe at large for me to do it.

It's my understanding that terms like slow oven date back to when there was very little temperature control for cooking. My grandmother was still cooking with a wood fired oven when I was young.

I mostly get the term from Townsends. A slow oven cooked slowly, so it was after the coals died down a bit. I was guessing 250F, but 300F probably makes more sense.

I (b. 1962) was raised by Depression babies, and grew up on casseroles. This looks good to me, and the base for a "week before payday clean the pantry" meal. As for the soupyness, that didn't seem like enough rice. And maybe put it down with the potatoes to catch the juices. Keep up the good cooking! You are channeling some Clara's Kitchen vibes.

Thank you so much! Interestingly, I actually almost doubled the amount of rice from the original recipe! I have to agree - even more rice could only help (and maybe reducing the water added slightly - but I’d hate to overshoot and lose the aspects that worked!)

I make a one-pot meal, starts with cooked ground meat (beef or sausage or a mix), sliced fresh mushrooms, rice, canned tomatoes, frozen mixed vegetables, and wine, broth, and water for liquid. Easy, fairly quick.
