In this extreme grocery budget challenge I'll try to eat for one dollar for one day, but this time I'm going to try to incorporate pantry flour into at least one of my meals. In this one dollar grocery haul discover frugal dishes that can be made for less than .35. If you are trying to save money on groceries I hope this video will help.

You treat every little amount of food preciously and highlight its qualities, I love this. It has helped me to save little bits and use them in ways to enhance my diet. I really appreciate this. It is amazing how much a little slice of onion or a very small piece of a carrot can add to a meal. I don't have to restrict my purchases but I want to always remember that we may not have an abundance always and we may need to make do w very little one day. It can be for many reasons not always a restriction of finances. Another wonderful creative video :)

Love this comment - it's definitely a strength in these videos, the wise, careful use of resources. It has caused me to re-evaluate my perspective on food and the abundance in which I live. I don't want to philosophize here, but it truly helps me value food more and inspires in me a desire be a better steward of what I have.

Ok. Without thinking too hard about it: First, I would cook all the chickpeas and pickle 1/4 of the onion. Breakfast would be a chickpea stew with cabbage and onion, as I like soupy things for breakfast a lot! Lunch would be potato pancakes with pickled onion, sauteed cabbage, and crispy chickpeas. Dinner would be potato gnocchi with sauteed stringbeans and onion in a basic white sauce. Such great deals on the potatoes, cabbage and onions - the big trifecta of cheap veggies.

Another wonderful Sunday visit with AM! Ardent Michelle, I especially appreciate that, if your budget is one dollar, you actually stay at or under that dollar. It drives me crazy when KZbinrs will set a budget of, say, $20, and then come in at something like $21.08. That is NOT staying within budget, and for some people, that extra $1.08 makes a world of difference. ~ Thanks again for your hard work, and have a great week!

I saw someone make an “egg mix” with the liquid and a few (5-6) chickpeas. He just blended in a blender and then fried it so it turned out like An omelette. 🤔 might be a fun addition for the $1 challenge.

I love soup even if it’s hot outside! I could live off of it and I do most of the time! I recently moved in with my son which cut my cooking way down, I was cooking for 5 now it’s just us 2. But thank goodness he loves soup too!! I love these $1 videos so much!!!!❤❤❤ thank you for all of your hard work!!!!

Your cabbage salad reminded me a little of the popular salad we would make for luncheons. Following your recipe add soy sauce , seasoning from ramen noodles . Toast the ramen along with almonds adding right before serving to maintain the crunch . It is so good. I like to add sesame oil to regular oil to give that wonderful flavor. Carrots are good too along with a few scallions. It just depends on what you have in your budget.

I see veggie cabbage rolls, a hash with all the ingredients, maybe crunchy chickpeas with cabbage chips as a snack (I know it works with kale and collards - maybe it works with cabbage? Might be interesting to try!) All kinds of ways to dress up those ingredients!

another option even without a thicker soup would have been to make a roux (or I guess it could be also mashed chickpeas for this challenge), and then use that to make a gravy type thing to put over the baked potato. I am making okonomiyaki (cabbage pancakes) with pickled onions weekly at this point.

I can't get over the low cabbage, potato, and Swiss chard prices! Produce prices are insane in Kentucky. Chick peas are one of the few legume/bean-type item that is a complete protein on their own. (Buckwheat also contains complete protein alone.) Dried parsley is a 'superfood". it is very good for you. Any nut or seed would add some protein and nutrients. I've been experimenting with fried breads myself.

Wow! He really left out on that cabbage, about half the price and it's hard to find a head that's small. Don't think you'd have protein if it wasn't for the bulk Bins but it's even harder to believe you can still find something to cook for a dollar for the whole day. Excelente !

Have you ever approached a produce staff person and asked if they would cut a cabbage in half for you? I bet they would do it. Also, for color, maybe a handful of spinach would be pretty inexpensive if they have it in bulk?

My meal ideas before watching: Potato/onion hash. Cabbage, green bean, chickpea stir fry. Potato, onion pancakes with a side of cooked cabbage. chickpea curry to pour over a baked potato. soup. tortillas with sliced roasted potato/onion fajitas with taco seasoning (is that a thing?) vinegar based slaw salad with chickpeas.... Now I'll watch the video! After watching this video, you actually had enough for about 5 meals making them 20c each. Pretty frickin impressive! Making guesses before watching reminds me of a series by "Mornings with Granny" here on YT called "what if"? She puts a few items on the table and says it is all you have in the house until the next day when you get paid--what would you make. I loved seeing how different people have such different ideas. DId I miss a video from last week? I was in the Caribbean during the -28 degree temps in Missouri!

Great video as always. It might be possible to make Colcannon with a potato and some cabbage. Potato and flour dumplings would work for soup.They can be made without egg. A little mustard makes for a binder and added flavor. Mayo for a binder if you want the egg flavor. Fried potato skins to garnish your cabbage soup. The outer leaves of your cabbage can be chopped and pickled. And that green bean can be an awesome garnish. Your videos always cause me to think of food differently and I like that!

My favorite way to get onion smell off your hands is pouring a bit of table salt in your hands and rubbing them together like you would with soap. Eliminates any smells, and then you just wash your hands like normal :)

I would make halushki with some fresh noodles, cabbage and onion. I'd make potato soup with the chickpeas. And breakfast would have been fresh biscuits.

@@ArdentMichelle usually, I'd mix about two cups of flour with a quarter cup water and a couple of egg yolks, or just a couple of beaten eggs and a splash of water if necessary. If I was doing them without egg, like you'd be with this shopping list, I'd do about 1/2 cup of water, a quarter teaspoon of baking powder and a little oil. Work it together, add a little more water if you need it and then let it rest like you did with the doubles dough. roll it thin and slice up.

after you cut your onion, wash your hands. when they're dry, run your hands on a stainless steel surface and it eliminates the odor. :)

Or wash down the stainless steel sink or faucet with your onion/garlic/hot pepper hands so clean sink and hands at the same time.

An odd note about black pepper. When my son was young he developed a craving for black pepper and would eat it by itself. Recently I've seen research that showed there is a component that activates benefits of most seasoning.

While challenge videos are interesting to watch most people could not manage this as it takes a certain amount of skill to finesse to plan a menu and execute a budget of $1.

With the potatoes, chick peas and cabbage: breakfast potatoes w/ a side of fried cabbage. Lunch, chick pea curry using pantry staples w/ a rubbed cabbage slaw and for dinner a baked potato stuffed with caramelized onion, along with the green bean and a few air fried chic peas for crunch.

I love your content! Thank you 😊 Also about the onion smell on hands: I learned from Valerie Bertinelli’s cooking show that if you rub your fingers and hands over your metal sink faucet, the metal removes the onion smell. I tried it and it works!

Amazing you can eat for so little. Lots of cooking required but if someone had time, they could eat for very little money. So glad I don’t need to eat for so little money.

I love my Instant Pot! Rice every week, meatloaf (I have the 8 quart), oatmeal, hard boiled eggs, stews, beans etc. You won't regret it!

Soup I eat it all year. There are cold soups. Too bad you don’t like peas 🫛 😆. I often wondered if what reaction you get when you buy such small quantities. 😆. Im so unimaginative compared to you! If i had to live on $1 food for a day, the first thing i think of is potato for breakfast, lunch and dinner! Either turned into chips/fries with loads of spices, or a baked one topped with a cheaty amount of butter and a fried egg!❤❤❤

Julia Child tip get onion smell off your hands by rinsing in *cold* water, rubbing with salt and rinsing in cold water again. Works well.

Great prices ! I don't know why your channel hasn't reached a million subs.... Yo Getting the cabbage was so smart. So much can be done with it. I made a recipe years ago that had cooked cabbage , onion, and swiss cheese in a pastry pocket that was baked or fried and they were delicious. With your ingredients you could easily make perogies too. You and Rebecca at Dollar Tree Dinners are such a public service to the world ! 😊❄☃🌞💗✝

The chickpeas could be blended into a flour - besan flour mixed with water, seasonings, and shredded cabbage makes a delicious (and very filling) savoury pancake

Considering there is chickpeas I think I would use half chickpeas for hummus, 1 potato for fries, and Sautee a bit of cabbage and onion on the side. Then I'd take half cooked chickpeas, some cabbage the potato and onion and Sautee all together cabbage and potatoes is one of my favorite meals. Sometimes we add sausage into it. Sometimes we just don't. And I love cabbage.

At one point when literally every penny counted, I would bring scissors with me and cut any extra plastic off the bag. I felt this was fair as they didn’t subtract a tare weight for the plastic bags. I did allow myself any found money on the floor to my weekly shopping allowance. You can imagine how I felt finding a quarter on the floor or even a dime,, which was more frequent than you might imagine. Technically, you got 5 meals from your effort. Your son ate 1 with the soup and you have enough miscellaneous ingredients for 1 more meal. 🤩🥳🎉🎉🎉

@@ArdentMichelle just in case anyone else is reading this comment, I will add these: 1. On bananas 🍌, choose ripe and pay less as water in stem and skin evaporates out. 2. Weight produce sold by the bag, they must be a minimum of weight but can and do weigh more. 3. If buying for a week buy produce in varying amounts of ripeness. 4. Save glass jars and use for storing produce to increase life span. DIY videos on KZbin. 5. Check for reduced price produce. 6. Bananas can be frozen when ripe, the skins can be washed and cooked as a vegan bacon, or added to a banana smoothie, skin has more vitamins and minerals than banana 🍌. 7. People who garden throw away vegetable parts like out leaves of cabbage and the core, outer leaves can be used as wraps or in soups. Also broccoli leaves, sweet potato leaves; pea & squash shoots; cucumber leaves; tops from carrots, leeks and radish; watermelon seeds & rinds, after cooking pumpkin rinds can be used in soups, jams & on their own.

Really good ideas again and I liked that you used cabbage in here. It is one of the cheapest vegetables in my country and I like to use it a lot, so it was interesting to see how you used it. I also use it very often in soups, I usually add the cabbage as last vegetable, because I like to leave it a bit crunchy. I also like to bake sectors of cabbage in oven when I bake potato or meat, because it is so healthy side dish. And cabbage salads - yess... I love them :D My favorite way to do it is like this: slice cabbage thinly and squeeze it well in a bowl to break the fibers - the cabbage becomes a lot softer and juicier and nicer to eat, grate 1 carrot, chop 1 red onion. Heat up some water and soak up raisins in there so they become soft (do not boil them), add all those into a bowl, add 2 spoons of mayonnaise and splash of orange juice. A bit of salt and quite lot of pepper to the taste. I can eat it as salad, but also when I crave some sweet. Because the raisins add the sweetness. Try this salad if you have not - it is so nice. :) I also like to do cabbage and minced meat stew. We eat it with boiled potatoes - "kapsa hakklihahautis" in google should bring you the recipes. We also do a lot of preserved cabbage in different ways - like sauerkraut, stewed cabbage. There is also a cabbage dish we do from sauerkraut, pork, barley, called "mulgikapsad". We make those in large quantities, preserve in jars and eat through winter. Those are eaten with boiled potatoes usually too. :)

You could also have added some cabbage to the pickles. Pickled cabbage tastes great. And I probably would have pickled the solitary bean to make the most of it - it got lost in the soup.

You could make a variation of cabbage schnitzel with these ingredients. The original recipe calls for making patties out of a combination of cooked shredded cabbage, onion, bread crumbs and eggs and then lightly frying them. For me, they are way more satisfying and taste way better than I thought they would. There's a good recipe on The Nosher for Cabbage Schnitzel you could check out if you're interested. You should absolutely try fermenting veggies. I started doing this a few years ago and became a little obsessed. Now I have a shelf on my fridge filled with fermented things like okra, cucumbers, mini peppers, hot sauce, beets, salsa and sauerkraut. Fermented veggies have a very complex flavor and are just wonderful. You can also use the leftover brine (when you're done eating the fermented stuff) to marinate meats. Anyway, another great video!

@@ArdentMichelle I know people use the chickpea liquid as a vegan egg substitute so yeah, that might work. Maybe also making a paste rue with the flour, adding mashed potatoes or soaking shredded potatoes and using the starch that separates? Of course, these would likely fit better into a challenge where you have access to eggs, since they're already a cheap meal, but you could likely come up with some workable variation with the ingredients you used for this challenge.

I cannot wait to try all of these recipes! I am obsessed with chickpeas and using cabbage and lettuce in a salad but my current favorite is with tomatoes cucumbers onions fried up chickpeas and avocado with a homemade tahini dressing. Thanks for another great video! Looking forward to the next one❤

Possibilities to make with the ingredients (my ideas before watching your video) - German potato pancakes (onion, potato and a little flour) - “slaw” (pickled onion and bean with cabbage) - stir fry (cabbage, onion and potato) - “steak and potatoes” (cabbage “steak” with baked potato) - Indian dish (chickpeas, spices, onion, potato) Curious what you’ll make now! P.S. I’ve been sick so haven’t tried orange slices yet, per earlier video conversation.

I love this! I really wish our stores had your prices on produce. Sometimes some things are in line with the prices you pay but it's usually at an Hispanic market that I can't get to on a regular basis. Also those markets are the only place I know of with bulk dried goods. And it's very limited. Also I love cabbage. And I'm wandering.

This was a Persian market that I was shopping at and they do have awesome prices. I saw something online the other day that rated states from highest to least expensive groceries and I think Oklahoma was the cheapest and California was #49. However, because we are an agricultural state, we have some great deals on produce. I think most of the deals at my local market are produce that's about to go bad but I'm fine with it.

@@ArdentMichelle I'm in Kansas and produce is definitely less expensive in the summer. There's a Hispanic market close to other shopping I like to do so I might challenge myself to a limited budget for one day. They also have a meat counter. If all you want is one chicken leg or a steak you can just get that. Sometimes the meat prices are crazy good.
