I'm not a huge tofu fan but these looked good. I think the trick to reheating burrito is to wrap them in a damp paper towel so they don't dry out.

When you add black pepper to a dish that contains turmeric, the antioxidants become much more available to your body! I cheered when you added the pepper, haha. As a bonus, those flavors are great together in a tofu scramble!

Love it! ❤ You know I’m your Vegan Girlie. 😊 Cacique also makes a Soy Chorizo. It’s the same size as their others but as you can tell that’s about half the size of the TJ’s (or Frieda’s brand). I find dabbing with a paper towel helps with the oiliness. One shortcut would be to use a Potatoes O’Brien version of frozen hash browns. All of your versions looked fantastic. If you can plan ahead freezing the tofu and then squeezing out the moisture after thawing will result in a more eggy texture that some people prefer. Also, if you have an extra $6 one month a great addition to your spice cabinet for transforming tofu into a scramble would be “egg salt”. If you can find Kala Namak (Black/Egg Salt) in a bulk spice shop you can get a tiny quantity to try. Your area seems to be quite diverse so a local shop will likely have it. 😅 Thank you so very much for doing these videos!

Yum! Love soyrizo! Recently I made a bunch of tofu, potato & vegan chs burritos. They were so freaking good! Since I ate them at home, I put one in the fridge the night before to thaw and then air fried for 30 minutes. I wrapped them in foil before freezing knowing I was going to air fry them. I would unwrap them and then rewrap loosely so they’d brown up a bit. I love the outside to be crispy.

I wake up on weekdays at 3:30am to be at work by 5:55am. I do my vegan Whole Food (no fake meats) meal prep on both Saturday and Sunday. Hang in there, practice, practice, practice and patience with yourself. This week I made Vegan sweet potato chili, corn bread, quinoa, farro and salad. I generally have fruit and ats for breakfasts.

I love the veggie burritos. I’ve used beans and the “chorizo” from field and roast too. For hacks- I microwave potatoes almost all the way done then let cool enough to cut and finish cooking with oil in either the oven, toaster or airfryer to get them crispy. I do it before camping too- parcook them before putting in ice chest. Saves so much time. I also like to toss tofu chunks in oil, soy sauce and corn starch and veggies in oil and roast everything on a sheetpan and then divvy that onto to rice or asian noodles for a much easier alternative to standing over a stirfry.

I’ve been using soyrizo for almost 15 years! I use it to make vegetarian tamales! (Mix your favorite salsa, soyrizo, minced veg and beans) But now I’m thrilled to make your breakfast burritos!! Has anyone tried to make tofu? I go through a LOT of blocks so I’m wondering if it would be a money saver? I make my own yogurt & that has saved me so much money & tastes amazing . @@ArdentMichelle My tamales are simple. Just what ever beans you like, salsa, corn, soyrizo and spices like chili powder, cumin, s&p etc. masa is corn meal, crisco, hot beef broth and s&p to taste. Just mix till you can pick up a chunk and it’s not sticky. I use soaked corn husks spread a small handful of masa and a scoop of the bean mixture and fold over. That’s it! I got a pressure cooker at a thrift store for $14. It only takes 10-15 min to cook so you can make tamales on a weeknight (or cook a bunch and freeze in batches! ) it takes around an hour at most! They reheat wonderfully too!

@@ArdentMichelle as long as you can stand them up right with something to off the bottom of the pan so they steam. I used a tall pot, added the rack on the bottom (you can use a bunch of the unused corn husks on top of the rack) I also add pennies under the rack so if the water dissipates I will hear the coins telling me to add more water*you can’t see the bottom so nothing burns!* add the lid, and cook slow. Just check the masa that swells up. It must be soft but not liquid, it firms as it cools down, add anything you like in a taco or burrito into the tamales and they reheat beautifully just leave them in the wrapper! You are only limited by your own imagination! I made so many different flavored tamales for weddings when I helped cater weddings and never had a complaint

Thanks for another great video. If you like your tofu chewy try freezing it before you cook with it and I bet salsa would be really good in that burrito. Also, if you want more of an eggy taste with your tofu try using black salt but I suggest putting it on at the end because it kind of cooks away.

Even though I am retired and my mornings aren't hectic any longer, I can still see myself taking something like this out of the freezer and enjoying it, and being satisfied :) Just as an idea, in the past I scrambled an egg with tofu and could not tell the difference, it seemed like all egg.. that is one way to stretch eggs, cost, nutrition, and to add extra protein :) I hope you are enjoying your new job :)

For me when I make them I microwave them in the baking paper from frozen for 3 minutes, then toast each side in a dry pan on medium high heat for two minutes each side they come out heate throughout but nice and crispy not soggy at all

I love breakfast burritos... actually I love all burritos . I don't like tofu but I just sub it for eggs but gee you can stuff anything inside and yes, store bought or drive thru is pricey. So you have to deposit the flavor on it with the spices. 😂 and improve the texture by squeezing out water and baking a long time. But I get it if you're not into tofu. You might see if you can find some chorizo seasoning that you like... add it to eggs with veggies. I personally get one from Savory Spice and then use a ground pork with a little water and white wine vinegar and let it marinade overnight. I think it would also be great to add on potatoes with eggs and peppers and onions.

oh I've had those. They are VERY good! I used Guerrero for my next batch of these and they were much softer than the ones from Trader Joes, although more expensive and fewer tortillas. There were 8 in a pack compared to 12 in TJ's. Glad you like my video! 💜

I had thought about using chorizo in some recipes, but I didn't like the ingredients of most chorizo sausages. However, I noticed that you can buy chorizo seasoning, so maybe I'll try adding that to the ground meat of my choice and see how that turns out.

Thank you for doing a lot of plant-based options. I love tofu and I think it is better when I make it than when I have ever had it in restaurants. I find that is because restaurants use a lot of oil and that hinders the absorption of seasoning in the tofu. Soy sauce and garlic powder is my go-to marinade.

I like using potatoes O’Brien for burritos and tacos. If you’re really in a budget pinch you get your potatoes, peppers, and onions in one product. I’ll still add extra peppers if I have them on hand, but in a pinch it’s great on its own!

Last time I made breakfast burritos I made everything from scratch and I was so burnt out I never did it again. The hashbrowns are a great hack to save time. Also wrapping in parchment paper and toasting the tortilla first makes it taste like restaurant quality!

The first breakfast burritos I ever had came from a Mexican restaurant in downtown Stockton, California. They were egg, potato, and chorizo, with queso cheese. This was the first time I had ever had chorizo and I liked it a lot. My wife and I would get these if we were going out of town for any reason and they would keep us well-fed through midday. I think they cost $3.50 each (and were huge!), but this was 1993. The ones you made look so good, I'm going to have to start making my own. As you say, you can easily adjust the recipe to your taste.

Chorizo and potatoes make amazing tacos. The Goya chorizo is mostly used to add flavor to rice along with sofrito. Try to make your own chorizo, you probably already have all or at least most of the ingredients already. Make a huge batch and freeze individual portions. Believe me, it's so worth it!

I need to figure out a way to freeze burritos and not have them be soggy when I pull them out as needed. I know there's the freezer burn situation if you don't double wrap it and get air out of the bag as much as you can. I think some sponge-like filling like rice will help absorb any greasiness/water that may leak through the tortilla from the inside (but I would like to keep carbs to a minimum).

I haven't had any of these be soggy at all. So far, I've only had them in the freezer for 2 weeks. I'm making another big batch today though that I plan to last for a month. I've been wrapping in parchment paper and then putting all the burritos in the big tortilla bag. I would NOT want to eat something that was freezer burned 😂

@@ArdentMichelle I had mixed results so far, and I believe the soggy situation is mainly due to the filling choices. I made some sort of fajita filling, and I'm guessing something like bell pepper will become soggy due to its water content. It's all a learning process for me, haha.

I like to take frozen burritos and microwave them for about 2 minutes, then I remove them and air fry for about 2 more minutes (just keep an eye on them). If you want the outside to be extra crispy you can spray with cooking spray before air frying

The Whole Foods in my area has a potato, black bean, egg and cheese breakfast burrito that is very good and my oldest daughter and I love them! I'm sure it would be cheaper to make our own - especially if I make the flour tortillas. Those burritos are $3.49 a piece - so I'm going to look into recreating those soon. 👍🏾👍🏾

I watched Mexican cooking on a Budget right before watching your newest post. Guess what ? She has a recipe for homemade chorizo using ground beef . 😊 I'm going to try it as I really need to watch the sodium. TJ 's are so much cheaper for hash brown potatoes. The roasted corn looks good. Have you tried TJ's Everything but the Elote seasoning blend ? I used it today on my enchiladas. Oh and I used the Guerrero brand tortillas they are soft and a bargain price. Have a blessed week 🙏.

I meal prep soy chorizo breakfast burritos all the time. I prefer soy to beef or pork because it does not make a greasy mess when cooking. Ralph’s has chorizo in the meat department for just $1.25 all the time. Strawberries are just now showing up in the market so I alternate breakfasts with overnight oats with Greek yogurt, fruit, chia seeds, and nuts. Keep posting because I look forward to watching your show every Sunday.

Isa Chandra Moskowitz suggested in her tofu scramble to begin with large chunks of tofu. During cooking, it will inevitably break down to a more realistic egg-like scramble.

I think that depends on the type of tofu you are using. Maybe she was referring to soft tofu. Extra firm only breaks down if you slice it or chop it. I was just thinking yesterday morning that small chunks work best in the burritos. If the chunks are too large then you are taking a bite out of something that has no flavor.

I am not a tofu fan, so instead, I enjoy making a tvp version of chorizo, and adding egg and potato to it. It's pretty good in a burrito as well. 😋

I’ve been making tofu scrambles with soy chorizo for years and usually wrap it in a warmed tortilla. I also like to pre cook some potatoes and cut up some to add to the scramble. You probably already know this but black salt adds an egg flavor if you want to try some… a vegan staple!😀

I really like tofu but can't have it per my doctor. He told me that any soy food will increase estrogen level and mine is already way too high. I use paneer cheese instead of tofu and it works a lot of the time.

I tried a chorizo from Kroger that was packaged just like ground pork but said it was pork chorizo… I hated it! I always liked those little skinny rolls from Walmart for breakfast burritos though.

I just hate chorizo. it's so salty and that's all i ever taste. I usually just make my own sausage. I have a grinding attachment for my kitchen-aid mixer. Plus i have hereditary high BP so it's better for me. great job on keeping your costs down and getting protein. i really should be better about eating breakfast lol.

I like the soy chorizo better then those meat chorizos that cost $1.42 at Walmart. Those meat chorizos.are very fatty. The soy chorizo is better. My grocery store also sells Cantellas pork chorizo in 1 lb bricks that are excellent for about $6.99 a brick. This chorizo is excellent if you eat meat
