Cookie Recipes 1. 112g Vegan Butter (I used the Stork Original Baking Block) 100g Light Brown Muscovado Sugar (or just any type of light brown soft sugar) 50g Golden Caster Sugar (or just caster sugar) 63g Sweetened Applesauce with 1/2 tsp Baking Powder mixed in 180g Self-Raising Flour 1/2 tsp Cornflour 1/2 tsp Bicarbonate of Soda 175g dark choc hips100g Your nut of choice) Mix the butter and sugar until fully combined, either in a stand-mixer or with a hand mixer. Once creamy, mix for a further five minutes until the mixture gets paler and light and fluffy. Mix in the applesauce mixture until combined. Add the flour, cornflour and bicarbonate of soda and mix until just combined - try not to over mix here. Then add in the milk chocolate and the hazelnuts and again mix until just combined. Spoon the mixture out onto a plate into 10-12 mounds (don’t compact them down!) and put in the freezer for at least 30 minutes, or overnight. Preheat your oven to 200℃ (if fan-assisted, if not set it to 220℃, gas mark 7 or 425℉). Remove and cook on a foil-lined baking tray for 6 minutes, then turn the tray around and bake for a further 4 minutes until the tops are light golden. Cooking times vary so much and I found these to cook much quicker than the non-vegan version so keep checking on them until they seem a light golden brown around the edges and just cooked in the middle. Allow to cool and firm up on the baking tray for at least 20 minutes, if not longer. ENJOY Recipe 2: Ingredients1 1/4 cups canned chickpeas, well-rinsed and patted dry with a paper towel1 2 teaspoons vanilla extract 1/2 cup + 2 tablespoons (165 grams) natural peanut butter, SunButter Natural or almond butter - room temperature2 1/4 cup (80 grams) honey (agave or maple syrup for vegan) 1 teaspoon baking powder3 a pinch of salt if your peanut butter doesn’t have salt in it 1/2 cup (90 grams) chocolate chips (use vegan and dairy-free chocolate chips, if needed) Preheat your oven to 350°F / 175°C. Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and the top to get the little chunks of chickpeas and process again until they’re combined. Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky. With wet hands, form into 1 1/2" balls. Place onto a Silpat or a piece of parchment paper. If you want them to look more like normal cookies, press down slightly on the balls. They don't do much rising. Bake for about 10 minutes. The dough balls will still be very soft when you take them out of the oven. They will not set like normal cookies. Store in an airtight container at room temperature (or in the fridge) for up to 1 week. Recipe 3: · 27.5g //55 g (1/4 cup) vegan butter (The solid stick kind rather than spreadable - I use Stork block or Naturli Vegan Block) softened · 37.5g// 75 g (1/3 cup + 1 Tbsp) light brown soft sugar · 15g// 30 g (2 Tbsp) caster sugar · 1/2 tsp vanilla bean paste/extract · 1/2// 1 Tbsp soy/almond milk · 50g// 100 g (3/4 cup + 2 Tbsp) plain (all-purpose) flour · 1/2 tsp baking powder · 1/2 Tbsp cornflour (cornstarch) · 40g//80 g (3 oz) dairy free dark chocolate chopped (or use chocolate chips) Instructions 1. Preheat the oven to 180C/350F/gas mark 4 and line a couple of baking sheets with baking paper. 2. Place the vegan butter, brown sugar and caster sugar in a bowl and whisk with an electric mixer until fluffy. Whisk in the vanilla bean paste and milk. 3. Sift together the flour, baking powder and cornflour and add to the bowl. Mix in until well combined then add the chocolate and stir through. 4. Divide the dough into eight portions and roll each into a ball. Place them well spaced apart on the baking trays and flatten very slightly. 5. Bake for 10-12 minutes until pale golden, be careful not to overbake them, they will firm up as they cool. 6. Leave to cool on the tray for 10 minutes then transfer to a wire rack to continue cooling. Enjoy straight away or store in an airtight container once cool. Recipe 4: 1 egg 85g of softened butter 50 g of brown sugar + 35g of white sugar 140g of white flour 50g of chocolate chips 7.5g of vanilla sugar (1 little sachet) or 3 drops of liquid vanilla 1 teaspoon of chemical dry yeast 0.5 teaspoon of salt Preheat the oven to 180 degree Celsius Mix the softened butter with the sugars (easier by hand). Then add in the egg (and the liquid vanilla). In an other bowl, mix the dry ingredients. Then gradually add in the dry ingredients, alternating with the chocolate chips. Form either big blobs or more smaller cubes, and put in the oven for about 9 minutes for chewy, 10 or 11 for less chewy. Recipe 5 75g of soft butter (I melt it but soft is ok too) 100g of caster sugar 50 g of brown sugar Whisk that together until it turns a light color 1 egg - whisk in In a separate bowl: 150g of flour 1 teaspoon of vanilla (i use powder so I don’t know how much that is in paste/extract) 0,5 teaspoon of baking soda 0,5 teaspoon of salt Mix!! And add to the other ingredients and - mix! Chop 100g of dark good quality chocolate Chop 50g of hazelnuts Fold that in! Bake for 7min in a 175(Celsius) preheated oven

@@o0xXirisXx0o I am not sure about this recipe, but in general, yeast provides both a rise and a flavour. Typically yeast is obviously used for the rise, however, I have used yeast in cinnamon role cookies. I never let it rise, but it added the distinct yeast flavour to the cookies which brought them really close to cinnamon rolls

She needs and would benefit immensely from a good food processor. Yes they are expensive but she would get the use out of it,it would pay for itself ok the end. My mum had one that lasted all of my life well to be fair longer than my life,no longer.. (40 years , I am 36) until my stepdad dropped it down the cellar steps last year.

Hiya! While I am not much of a baker, all of my close friends and fam say that I make their favorite banana bread, to a point where people have asked for it as their birthday cake. Hope you get to try it and find if it is the one you have been looking for! • 1/2 cup butter (or dairy-free alternative; don't use oil though!) • 1/3 cup white sugar • 1/3 cup brown sugar • 2 tsp vanilla extract • 1 and 1/2 cups flour (all-purpose) • 1 tsp baking soda • 2 eggs • 1/2 tsp salt • 1/2 cup sour cream or greek yogurt (non-dairy does work) • 2-3 over-ripe banans (frozen the night before and defrosted before baking; smash em up real good, preferably with a hand mixer) • As many chocolate chips possible - Combine wet ingredients (including smashed bananas) in a large bowl. Combine remaining dry ingredients (except the chocolate chips) separately in a medium bowl. Slowly incorporate the dry ingredients while mixing. After everything is mixed well together, add the chocolate. Plop into a greased baking tray of choice and bake at 180º centigrade for 35-45 mins or until clean knife withdrawal!

Best cookie recipe I've found is half caster sugar, half brown sugar and add some dessicated coconut. I don't know why, but it makes them crunchy on the outside and chewy on the inside and the coconut adds a deeper flavour. I suppose you could also substitute some of the flour for coconut flour instead of the dessicated coconut, but I haven't tried it.

Right but consider... a cakey cookie (or a cakie as I call them) are a whole other sweet to a cookie. I will say though we don’t use yeast... just self raising flour, baking powder and juuuuuuuuust enough mixing! They should always be eaten warm, and preferable dipped in a milk of your choice. (Really really cold oat milk is A+ for cakie’s) amazing the variety of cookies out there! I feel like the chickpea one would be good for cookie dough! You should see if it does well in homemade cookie dough ice cream!! The Bon Appetit one is excellent for a cookie! But personal preference and that!!

If you ever want to try an other recipe, try this one (not dairy free, so you might replace the butter ): 350gr flour, 170gr brown sugar, 2 eggs, 2 teaspoon of vanilla extract, one teaspoon of salt, 350gr of chocolate chip (but you can actually half that in two), 1 teaspoon of baking soda and 250gr of soft butter (not melted, not hard). You mix butter and sugar until it’s well mixed (the butter needs to not be noticeable anymore, you can have some kind of humid sand texture or just completely soft melted texture depending on the temperature of the butter), you can do it with the hand if the butter is a little hard. You add the eggs that were mixed with the vanilla (with a fork, like an omelet) and you mix again. You add the flour, salt and baking powder. There you can use your hand again, it becomes quite hard. Then you add chocolate chips and you cook it at 180 degrees (celsius) for 10 to 15 mins. I use just two little spoon to make the patties. That recipe give perfect soft cookies, I think you would like it! The cookies as cooked when they stop to shine on the top ;) enjoy! I’ll probably try the last recipe you did! Cheers from Belgium !

Ah, thanks for explaining about the caster:brown sugar ratio -- I've been wondering why my cookies are always so soft -- probably has to do with the fact that I always substitute out all the caster sugar with brown sugar.... Maybe I should just follow a recipie properly one of these days lol

Okay, I have to try the chickpea one, simply because I am trying for healthy. I have a recipe for brownies using only medjool dates for sweetening. Have not tried those yet.

I prefer a chewy cookie. But when I lived in Holland there was a lot of cakie cookies and I used to regularly get a white chocolate and macadamia cookie that was super thick and cakie and it was TO DIE FOR totally changed my opinion
