When you bread chicken, always have a wet hand and dry hand. So take the wet chicken put in flour. Take dry hand, put it in the egg, take wet hand and put chicken in crumbs. Dry hand to take it out.

I forget to do that. Every. Time. Then each family member walks in separately and nags me for it 😂. Same thing with chopping the onion. I know very well how I’m supposed to do it, but then someone walks in, I get flustered, and voila - chopping like a noob.

@@Evieisnumber1 There's a couple you can probably google it. I'm in the US now, but we had the same when I lived in Misawa Japan. It was S&B curry and Vermont curry. I have always got them in a box and broke apart the roux cube things. I've also come to like the Otoggi brand from Korean for their curry. I've seen these available on US and UK Amazon's so it might be able to get online.

amazing video as always! if you want to give it another go at some point, a couple tips: the rice mountains fell apart bc you were using long grain rice as opposed to the short/medium grain rice that they use at wagmamas! it sticks together bc of the starch content, and the method of soaking is meant to get rid of some of the excess starch in those types of rice (think sushi rice, arborio etc) so when you do that with long grain it doesn't have the same stickiness as for the sauce, you can obviously add more flour, but tbh you could've just let it simmer with the lid off for a bit longer. the excess water would've evaporated off & you'd end up with a thicker sauce with even more concentrated flavour! glad u and the fam had a nice meal tho

Doing the mise en place before cooking can really help! Prep and measure out all the ingredients, spices, etc. Yes you need more little bowls.

Ah I literally made the same thing last week and loved it! I made it with tofu (breaded it the same way as they do the chicken) and it worked so so well, for all the veggies out there :) love your channel! x

With the sauce, I'd recommend not sieving it but blending it. The blended onion, garlic and ginger makes it thicker. Also, some recipes recommend adding carrot to it as well which will also thicken it. Other good additions are honey for a little sweetness and worcestershire sauce. I've yet to try the Wagamama recipe but can't wait to. Also, find a local Korean store and get sushi rice, that's the best with Katsu imo

Great job on the curry Grace. Especially for a first time! U can do the popular one hand wet, one dry or do what I do- one hand is wet and dry then the other hand is kept ‘clean’ to use a spatula or chopsticks to move/flip food with.

If the sauce thin you can reduce the sauce and the you can make a roux with is a fat( butter,oill,lard) with a starch like (flour,cornstarch, or potato starch) this will make the sauce thick and what headphones do you use in most videos

Hi Grace, really enjoyed your every video! Although I never been to wagamama before, I guess the chicken katsu curry rice is a Japanese style dish, and I highly recommend you trying out the Japan curry cube. It's basically a curry stock with oil, curry, salt, some starch for thick texture and other spices all prepared and mixed together. Its super super super easy to use and never have chance to fail! With that you can easily create authentic Japanese curry rice haha. Just fry some meat, potato or carrot, then pour hot water and let them simmer with the curry stock, and voila! Definitely worth trying!

I haven't watched it yet so I don't know how you make it. But i did a healthy version with the sauce made out of carrots, onion, potato and garlic with curry powder blended up and it tasted exactly the same!

I made Katsu curry for dinner today and it was incredible. My sauce turned out too thin as well so I added a few tablespoons of flour and whisked on high heat and that helped with consistency!

"katsu" actually means breaded and deep-fried, so chicken katsu means breaded and deep-fried chicken!

Hi Gracie. Congratulations on the Katsu curry. Have you ever tried baking with semolina? An example would be (for a 10" cake tin) 350g each of semolina (£1 from Tesco), caster sugar and, for example, mashed banana or soaked dried fruit (if you use dried fruit, add Christmas cake spices to the dry ingredients), 2 tsp baking powder, 500ml of milk (or substitute) and I add two eggs. Just roughly mix the wet and dry ingredients and put in the oven at 180 degrees C for about an hour. Dead easy prepare and quite a substantial, filling cake, with or without custard/ice cream etc. Good to take to school for a lunchtime filler. What does Jess work as? Best wishes.

I know I´m suuuper late to the party here, but I have a little tip for making the sauce taste mroe like wagamamas: I lived in Japan for a summer and ate a lot of katsu curry. When I got home I really wanted to replicate the dish so I tried and tested lots of recipies. Turns out the sauce is made with special japanese curry stock blocks. You can find them in asian supermarkets and the most popular brand is called Golden Curry. :) It makes the curry sauce thicker and taste more like japanese curry than indian curry.

Grace the trick with the chicken is have one wet hand and one dry hand, I.e use you right hand to put the chicken in the flour and drop into the egg without touching the egg then coat and take the chicken out with your left and drop into the breadcrumbs! Gyoza and edamame are my fave Wagamama dishes.

I just had a look at the wagamama recipe for yakisoba. Mega surprised. So yakisoba sauce in Japan is a thing, where I live, soy sauce yakisoba isn't a thing. The sauce is more like hp sauce but sweeter (and in fact when I was back in the UK, that's what I would use when I couldn't get the sauce)
