It sounds like the meetings so far (outside of texts) have been partially those public personalities meeting and working instead of the private people behind them. Going without a hat or presenting in a very different style than the style used when performing can be a good way to demonstrate that the date is an off-stage moment. A good way to find out might also be to start with professional performer talk and about where being on stage ends. For example, asking about how the other person feels about talking about real life stuff on stage, and then following up by asking if the other person is comfortable talking about this date on stage (or if that's too personal).
