I just throw the cider yeast into the juice, put in a warm place, and wait till its finished. A couple a weeks later... delicious :) Yeast is Magic

I made 6 gallons of hard cider this year for xmas gifts.Turned out really good.Its all in the apples.was a little over 13%.

I would suggest using corn sugar than ordinary granulated sugar because corn sugar gives a higher alcohol boost and carbonation so your drink won't taste flat.

There are some merits to using other sugars (dextrose vs sucrose) because they are easier for yeast to breakdown but I'm not sure they give a higher alcohol content as such given time (unless you have something you can link to to say otherwise) because enzymes in yeast will break down sucrose into dextrose over time - but the main thrust here was not to create a great drink but to create a cheap high ABV quickly. Also there is a cost burden with using more refined sugars, dextrose is significantly more expensive in the UK than sucrose. But each to their own. I haven't done this again for years. I've never had great success with carbonation but I think that's down to lack of will power. Thanks for your comment. Cheers.

Thanks. I only added water to reduce the overall cost and added sugar to bring up the OG to give ~7%. The recipe is based on WOW (Wurzels Orange Wine).

mine has a layer of foam after 3 to 4 hours. normal? the yeast is moving up and down so i guess thats fine.

That all sounds normal. You usually get vigorous fermentation in the first few hours/days (temperature dependent) while the yeast starts (from aerobic respiration to anaerobic respiration) this is why I suggest leaving the bottle partly empty and topping up after a few days to prevent foam coming out of the airlock. +saabcrow yea its totally fizzing now. bought a new hydrometer today for a future bramble wine and decided to test the cidee and it had a gravity 1065 about 8℅? im guessing it will be a bit stronger hehe.

I'm afraid I can't recall. If it's any help I checked the video files and it looks like I cut out 25% of the timelapse, so I guess 4-5 hours.

I watched this video and I made it.. I made it with % 15 abv with using some honey.. It was lost its apple taste and smell with high alcohol volume It looked like to cheap vodka with horrible yeast taste and smell I drank it and it caused a horrible hangover syndrome in me.. I will never do it again

Sorry you had a bad experience. I am not surprised you had a hangover at 15% ABV, which is impressive, what yeast did you use? The amount of apple juice in this recipe isn't really going to give a strong apple flavour nor colour: it's cheap "prison" style hooch. Homebrew like this will often have a yeast taste when it's not probably cleared.

You got a headache because your cider was young and probably had a crapload of bad gases in it. Did you off gas your brew at anytime?
