Turkish Pumpkin Dessert is a traditional Turkish dessert from Ottoman times. It is still a very popular dessert in the wintertime. With containing only two ingredients, pumpkin and sugar you get the pure delicious taste of pumpkin to enjoy. It is served with coarsely chopped walnuts and the syrup from the dessert. In some parts of Turkey, it is also served with drizzled tahini on top and it goes very well with it too. Even though I forgot to mention that in the video I strongly suggest you try drizzling some tahini (sesame paste) if you have on hand.
Ingredients For Turkish Pumpkin Dessert
1+1/2 kg. peeled seeded pumpkin (I don't know the types name (please share your knowledge if you know) but it should be the one on the video:) Try to choose if you can the ones that are rather dry when it is sliced. And the outer skin must be thick and dry too.)
about 3+1/2 cups sugar (620 gr.)
To serve: coarsely chopped walnuts, tahini (sesame paste) optional

Oh dear! This reminds me on my childhood when mum made this in winter time. She leave on side of wood fireOwen to cook slowly. When it’s cooked she put apple jam on top. Greetings from a Bosnian woman from Australia

Hi, I'm from Puerto Rico and I'm fascinated with the food of your country and of course with your channel... Although we don't prepare pumpkin candy we make other sweets very similar to yours using practically the same methods but with other fruits, but we add spices such as cinnamon sticks, cloves, brown sugar, and others to the syrup... oh and your type of pumpkin is very similar to what we have and consume on the Island ;-)

The market looks like it has a lot of beutiful ingredients and I appreciated hearing your cute exchange with the man selling tge pumpkins. You are always so very nice! I'm not religious myself but it warms my heart when other people use it kindly. It reminds me of how my great grandmother would talk to me. I have to try making this pumpkin desert myself.

In Mexico we call it "Calabaza en tacha ", we eat it in November specially during the day of the death. My mom used to mix a bit of it in a glass of warm milk and puree it. It was delicious . Also, I'm always impress to see how much Turkey looks like Mexico, such similar cultures and no relation between them. Our markets are exactly the same, we even have our version of menemen ("huevo a la mexicana").

Masha Allah, another super video. In india, it's called petha and Agra (city of Taj Mahal) is famous for it. The Agra petha is soft like candy with little bit green in colour. In South India, we use it to make curries, one with tamarind and pulses, other just stir in oil with cummin and mustard seeds, and serve it with rice. Do you also make curry with Pumpkin?

Thank you for the video. Seeing the food bazaars are so interesting to me. Do most people buy their food from open air markets such as these (what we in the US would consider farmer's markets) or do you normally buy from grocery stores (like we do in the US) and supplement with fresh produce from the bazaar?

I’ve tried it in a restaurant , it had a drizzle of tahini, it was nice . In Palestine, we have something similar, but it is more like jam , they soak the pumpkin before cooking in a solution of water add some kind of white powder to keep the pumpkin firm , and it is preserved in jars for a long time , it is delicious, but the Turkish way is lighter and easier to make.

Can I use soft brown sugar for this recipe instead of white sugar? I was thinking as it is an old traditional recipe maybe originally they used to use brown sugar, and it is healthier.
@MaylarArt
@MaylarArt 4 жыл бұрын
You can substitute with brown sugar with no problem whatsoever or even honey (which is delicious, but harder to cook, as it demands more attention (burns more easily). However, it tastes different and also, might not get you the same type of syrup in the end. You can also substitute water for coconut water or rose or orange blossom water, it all gives different additional taste to it. I have a friend who uses orange juice instead of water, but I personally am not a fan of that combination. Some add few drops of lemon to the water, as it prevents sugar for accidentally crystallizing, though if you follow the wonderful and clear instructions from this video (aka, cook it slowly and on lower temperatures), that won't happen anyway. Adding some cinnamon is absolutely delicious in my opinion, too.
