Oh, I am totally making this one too. my sister lives in Florida and they still eat soup all the time. I think this would be a great option. I think how many cups of the basil with you add really probably make it so flavorful and I love anything with lemon this is probably be good with orzo as well.

I've tried three of the five recipes in this series. The Chicken with Sage Rice and the Meatballs and Kale pesto pasta and delicious. The soup recipe did not work for me. The rice absorbed most of the water to the point that it was closer in consistency to a pilaf than a soup. I had to add 4 extra cups of water to get all the kale covered and a soup consistency. I added extra dried seasonings but I didn't have any more basil, coconut milk or pesto to add so it tasted watery. To address this, I would reduce the rice by half or leave it out entirely and serve the soup with toast. I also had issues with substituting parmesan for nutritional yeast. It clumped and became stringy. I would either omit the cheese, use nutritional yeast or add it and the end after the soup has cooled. I would make this again with those changes if I were making the whole week of meals to use up the leftovers but I wouldn't make this soup as a standalone recipe. There are much better white bean kale soups.

Ive made this about 5 times now with modifications. Homemade “real” pesto, I sub the rice for potato, spinach for kale and add chicken sausage (brown at beginning). I do about 4 cups broth no water. It freezes well too.
