I made this dish for my wife and daughter for Mother's Day as an appetizer. It was a last minute thing due to the fact that I was running out of time. However, it was phenomenal! I omitted the scallops due to the cost and used bacon instead, but they didn't know the difference. They were blown away. I will certainly make this again......maybe even tomorrow! LOL

OMG, great recipe, I made it right after watching this video. But I added lemon to it and instead of peppers and spinach I used parsley and cilantro. My wife characterized it as sex on a plate!
