They've replaced the standard hex with some weird, possibly proprietary, 6-point external star spline type head. I hate them.

I used a 10mm socket with a 1/2 inch breaker bar to loosen them. On a Chris Fix video, he said to disconnect the negative battery terminal and let it sit for 20 mins to discharge any capacitors.

Hello! Yes, first disconnect the negative terminal from the battery then you start removing the seats.

If your seats don't have any connectors going into it (airbag, heated seats on MS3, power seats MZ3/MS3) no need to disconnect the battery. If they do, it's best to disconnect the battery for safe measure but not 100% necessary if the car's been sitting for a day or so.

Ive been told if you dont remove the negative terminal of the battery the airbag will go off.

It won't necessarily activate, but if there's some kind of short or something when removing the airbag sensor, then the sensor can get messed up.
