Today a light but tasty recipe, the Ricotta and Zucchini Medallions are an excellent alternative to fried meatballs, crunchy on the outside and soft and stringy inside, to be eaten without guilt!
Very easy to prepare, you put all the ingredients together and mix with a fork, that's all!
Do them again for dinner tonight accompanied by a nice mixed salad!
