Onggg I don’t hold him against it though bc I hate to sound like a nerd, but that was one of moments this episode that felt like manufactured stress. Nobody would’ve been tripping how Marcus was lmao.

So th is is a TRUE one take. There are no natural cuts and the cuts to black are because hulu is trash even if you pay for no commercials. Idk the exact runtime of the take but its around 17 minutes. Ridiculously well acted, this would have been a GREAT episode without it being a one take, but that just takes it to a whole new level.

The amount of coordination and talent it takes to make people shouting over each other work. It’s part of the magic of this show, it feels like actual life and real dialogue that would exist in that space and you feel for every character in their own way

YES YES YES. I love the dialogue in this show. It always feel like real people are speaking in a actual conversation, not a preplanned, prewritten conversation they've learned in advance

Also regarding Carmy and Syd working at places that felt military. If memory serves me right, French kitchen practices were instilled by former French military. That's why it feels so military. Yes chef no chef in unison. The French Brigade hierarchy. Sense of urgency. Discipline. Consistency. Perfection.

oh let me tell you, I left this episode being so irritating and stressed out. If I were Carmy I don't know that I would have been as level headed as he was. I worked in a restaurant for 1 summer and 1 summer only (and not even as a cook or server) and if shit hit the fan you always let the most experienced people run the show. Having Sydney wanting to not listen to Carmy and Marcus not making the cakes made me want to rip my hair out Also, you guys used the word snapped (which could have just meant different headspace or like a bad snap) but I saw it as him just using his experience to realize that the situation was bad and immediately acting on the plan to fix the situation. Just damage control, like his story about putting the fire out in the earlier episode. The kitchen was on fire and he was trying to put it out, they just had never needed to deal with this intense of a situation before so Carmy had never needed to be this aggressive before. In conclusion, I am 100,000% on Carmy's "side" this episode (and I just say side because I know people on social media have debated about who was in the right)

Thank you for a great reaction. I really like how you can see the situation from the POV of each of them. As you've said Carmy did a good job at building this team, inspiring them etc., but Carmen also has an ego, can see co-wokers as his competition (I definitely think he sees Sydney and the good review she got for the risotto in part like this) and has a poor communications skills. He said about the risotto that it's "not perfect" and that was that, but he should have told her why, they should have talked about it and maybe make it better because he is really skilled etc.. Remember Sydney told Carmy she did not want to do the hierarchy thing, that she will get all the bullshit for everything but he insisted without really listening. She also told him she does not want to have a boss behind her back yelling at her. I also think she is really proud and scared of failure, so admitting she did anything wrong must be really hard for her. Carmen was throwing a lot of stuff on Sydney this whole time, taking her for granted I would say (if he did not want to do the to-go thing he should have talked with her about it. He could have said no. He also let her prepare the system and he didn't review it before he turned it on - also doing it while she is out of the room. Did Sydney do a mistake? Sure, and it isn't too strange when she is always overloaded with responsibility. But they should have talked it out like they did behind the restaurant that one time.). He is obviously going through his own shit, everybody is, but it bleeds into the restaurant and that is not good. We as viewers see more sides of him, but the people at the restaurant don't (but I also understand that that's why this show is so good, I don't want to watch perfect people doing things perfectly.) When she asked him if they are good I think he should have told her the truth, or at least tell her they will talk about it later. Not lie. And so one moment he doesn't want to talk about it, and when they are past that and dealing with something else he brings it back up, it's really confusing. Also when the mistake was done, she tried to work hard on fixing it, but Carmy didn't let her - he yelled at her to fuck off. I don't think he was calm when he tried to fly the orders - he was well on his way to a meltdown from the beginning. Notice when the music starts, how it creeps in, getting louder. A few times I was in a similar headspace as Carmy and man I get him. He will feel like shit after. His grief and his desperate need for the Beef to be doing great also doesn't help. It's sad but if it didn't happen that day, I think it would happen some other day. Yeah this episode cannot be taken on it's own - it's a culmination of everything, in the worst possible way. And it's a masterpiece. And just a few things: Tina was calm, yes, but she also brought her son there on a very important day without telling anyone beforehand. Also why are people shocked/disappointed by Sydney when she snaps at Richie? Did you not hear all the nasty things Ritchie called her up until now? And then asking her who she bl---d at the newspaper to get a good review? Everybody has their limit, and even if the things she said to him are ugly and I don't condone it, I understand her thinking. He hurted her and she wanted to hurt him too (Also she didn't stab Richie, he walked on the knife but she shouldn't have hold it like that, yeah). People are messy. We can think whatever but it will be on her and Richie if/how they will work this through. That's just my opinion. Hindsight is 20/20. This meltdown was unavoidable and one can only hope they all will learn from it.

This episode gets me because the show makes Carmy out to be the bad guy. Syd and Marcus fucked this service and they don't take responsibility and throw a tantrum. So frustrating. Also the issue was not that people wanted the Risotto, it was that Sydney left Preorders so people were ordering online before lunch service was open. They had no time to prep. There is a reason why Fast food joints that do delivery prepare entire batches of fries or burgers. It is a horrendous situation and I think almost anyone would crack not just Carmy. Can you imagine trying to make 250 sandwiches in like 8 minutes as people come in to pick up their order? Let alone the rest of their orders. On top of that you have your dedicated dessert cook who is off doing fuck knows what. Carmy saying "That dish was not ready" was him unable to repress his frustration at Syd going behind his back and serving the Risotto I don't think it had anything to do with the dish creating a buzz. Even though the review definitely resulted in an influx of orders. Also excellent catch on Ritchie being afraid of being left behind. That definitely comes up later. It is partly that but I interpreted that working class speech of him trying to cling to the past and Mike's memory. Everyone at The Beef loved that guy. Especially Rich, Tina and Carmy.

The show does not make Carmy into anything. They are just people making mistakes. Everybody contributed to this mess. It's a culmination of all the frustrations and their bad communication.

@@novembermedusa I just don't think Carmy did anything wrong, people were fucking around so he needed to take control. The only thing he might have done wrong is physically put his hands on Marcus and that offhand comment about Sydney's Risotto.

Carmy didn’t do anything to cause the situation, but he totally lost control of his staff and himself. The chaos that ensued wasn’t his fault directly but IMO the way he handled this situation was a perpetuation of the abuse he has endured and a clear sign that he wasn’t ready, in that moment, to lead this ship. I think it’s a very real physical manifestation of a lot of the themes that run through carmys character as a whole - insecurity, unhealthy perfectionism and emotional volatility. He is in the restaurant for the wrong reason and here we can see it. Personally I think the show is really nuanced and doesn’t paint any one person as the ‘bad guy’. I think that under a better leader, the rest of the team don’t devolve into mayhem and the situation is handled much better which is why this episode seems to focus on carmys outburst. It’s not his fault, but this episode is about him.

At the end of the day this is Carmy's ship, his business and his crew. Him being uninvolved absolutely contributed to this mess. He basically gave total responsibility to Sydney and never backed her up or look over her work just to be sure everything was in order. He saw that Marcus was distracted with donuts and aside from just yelling at him he didn't go over to him and say I need your complete attention on cakes today, no donuts. Everyone played a part in the meltdown especially Carmy.
