The reason the steak is so tender is that it's run through a tenderizer. It's actually a cheap cut of meat but tenderized so much that makes it cut so easy. We call the cut of meat, cubesteak.

I only use a knife and fok with a burger that is sloppy or falling apart or if it is a big burger, then i cut it in half and still eat the halves with my hands.

For anyone imagining that American biscuits are this exotic, mysterious thing. They are not hard to make! 😂If you have access to butter, buttermilk, flour and baking powder you can easily just try them out. Yes there is a little bit of technique involved (use frozen butter, mix carefully and don't overmix) in getting them right but it's nothing you have to go all the way to America to try. Like literally, ten minutes to prepare before they're in the oven.

I was watching a Beesleys video where they were having breakfast, and she commented on how weird it was to have chicken before 11. I admit we tend toward sausage, bacon and ham, but no one would think twice about ordering something with chicken for breakfast. My father's favorite breakfast was steak and eggs.

I hope Brits took note that preserves came with the biscuits and not jam or jelly. It seems difficult to learn there's a selection of more than that in the US. And the US uses the term Greasy Spoon as well.

"Why do people still come here after 70 years?" The honest answers are that tradition is a hell of a drug and people are generally intellectually lazy. They will just keep going to the places and making the choices their ancestors made. Marriage. Kids. Same town. Same diners. For generations. Nostalgia, and its offshoot Tradition, are the most addictive and the most destructive drugs known to man. The food might actually be good. But I've found "Mom and Dad went here" tends to carry people into restaurants that maybe should have closed years ago far more often than any actual consideration of the food. They get the same item. Every time. How can they speak on the food when they've never had but the one dish? Anyway, enjoy your time in NYC. When you come back go to New Haven, Connecticut and try the actual best pizza on the East Coast. EDIT: Oh yeah. I no longer eat pork (boar stink is real and pervasive, y'all lol) but if you do there is a spot in Philly called Tommy Dinic's. They do a roast pork/provolone cheese/broccoli rabe sandwich that should be as famous as the Cheesesteak. And this from someone who generally thinks all pork tastes like the last $hitpit it rolled in. If no one has mentioned it in the lead up to your trip your community is failing you.

Sorry, but New Jersey is NOT the home of the diner. Even the BBC agrees that American diners began in Providence, Rhode Island. BBC : America on a Plate - The Story of the Diner [part 1]
