I can answer the question of how a chicken fried steak (also called country fried steak) is tender. There is a special type of hammer, it has kind of an Axe look side and spikey hammer side. The hammer side, is used to tenderize the meat. Some also use a meat tenderizer on it as well, some don't. But both are designed to do two things. 1. Tenderize the meat. 2. Gamey foods, to make sure they get tenderized so they don't have that gamey texture. Both things greatly improve the way the food will taste and feel texture wise because of it. Granted, it does depend on the type of meat and dish being made on whether or not you use either thing.

Italian mothers are the same. My mom loved feeding my friends. She was a fantastic cook and enjoyed seeing the smiles on my friends faces as they mowed down her food.

As a Texan, people’s perception of American food was always so strange to me. I grew up eating Chili, Gumbo, and barbecue. Not a lot of burgers. 😂 But I guess we all have our stereotypes for other places and people. 🤷‍♀️

Eating like that all the time isn't healthy. I don't live in the south, but I can find food like this when traveling almost anywhere. And it certainly feels good to wake up at some motel, get up, and drive to an IHOP where I can find a greasy breakfast.

@@ypw510 Ok, it isn't the most healthy and most people don't eat this every morning unless they are like the 600lb plus people. BUT Southern food is all about the style of cooking. Home cooking, mom got up at 5 am and started cooking right away, kind of a thing. Made with love and soul, not soulless like IHOP or other breakfast/fast food places

Miss Virginia is the epitome of Southern Hospitality, she treated the boys with respect and patience knowing this was all "brand new" to them. I love these travel videos watching them experience new flavors and combinations of foods. Plus finding a beautiful host like Miss Virginia to give them some eating tips and history about the Loveless Cafe... priceless!

I love that over the past few years, Josh and Olly became like unofficial ambassadors and fans of southern American biscuits. I dunno why but it makes me proud lol.

The tradition of eating a very large breakfast in North America (the Canucks do it too) comes from the need for working men to stack on the calories before heading out to work. One of my grandmothers cooked for the seasonal workers on her parents' ranch, while another joined great-grandma in cooking for loggers. Every morning at about 6 a.m., those men would consume up to 2,000 calories, and have a dozen doughnuts, and a couple thick steak sandwiches in their lunch buckets. They worked off every bit of what they ate (obesity wasn't much of a problem here until the 1960's). My grandfathers and great uncles were all skinny as rails, but their muscles were as strong as the steel that makes those rails. Our food traditions were arrived at honestly. Do remember that, eh?

Yeah, my dad was 6'3", never got over 180lbs, had skinny arms but was strong as an ox. He did farming as a kid, then became a mason's apprentice as a teen, a carpenter in his 20's, a millwright in his 30's-his retirement at 67. We ate a big breakfast of biscuits and gravy, 6 days a week. On Sundays, we would have bacon, sausage, eggs and toast made with homemade bread, served with homemade butter(after making buttermilk in the churn on Saturday, after milking our milk cow) fresh strawberry or blackberry jam from the berries I picked on Saturday, so my mom could make the jam for Sunday(and can some for the upcoming winter). I miss those days. Now I have Greek yoghurt, with wild blueberries and homemade granola, for most breakfasts. Getting old sucks.

My dad, born at the beginning of the depression, same. Farm kid, one of 8, then Army/Korean War, fireman whwn he returned. Never really put on weight. Died at 49, but was still in good shape until he got sick ​@bamachine

Yep, breakfast like a king, dinner like a prince, supper like a pauper. I come from a long line of farmers and our dinner (lunch) was huge, then a nap or rest for an hour or so during the hottest part of the day, back to work and a very light supper of cereal, a sandwich, or in my grandad’s case, leftover cornbread crumbled in a glass of buttermilk from his own cows.

@@leapintothewild Yeah, almost every day it was cornbread and milk for supper, occasionally we had mush and milk, just to change it up a bit. Only on Sundays did we have the huge suppers with steak, fried chicken or pork chops with turnip greens, fried okra, fried squash, corn on the cob, all of which we raised(the cows, chickens and pigs) or grew in our garden.

YES!! I think I've posted every time that you put BUTTER on biscuits and cornbread. Brits put butter on sandwiches for pity sake...but continue resisting putting it on biscuits and cornbread. Born and raised in the deep south. Never, ever see people eating biscuits without butter. Slice in the middle, butter, then add jelly or jam! Yum! I've perfected making my grandmother's buttermilk biscuits. Nothing better! 👍❣️

I’m a southern man and I have to say it’s so nice to see you guys coming to enjoy our culture. That’s what the world needs more of. Everyone sharing the best parts of what we all have to offer in this world is so much more important than focusing on the things we disagree about. I live in Nashville and always look forward to the end of summer when tourist visits diminish a bit. Then Loveless goes back into our regular restaurant rotation & I don’t miss my grandmother’s cooking quite as much. When Carol Fay Ellison (the Loveless biscuit lady, who had been with them for 30 years) passed in 2010, all of Nashville was in mourning. Fortunately she wasn’t the only one who knew the recipe!

I love when Joel eats something delicious, if he's wearing a hat, he takes it off, and whether or not he's wearing a hat he says, "Oh, my days." I'm learning that's an Anglican/Church of England thing. Even Anglicans in the US and Australia say it...but for Joel, it is clearly an exclamation of gustatory joy. ha ha. Every time, he takes his hat off and says, "Oh, my days."

Aside from the charm of Josh + Ollie's chemistry and food adventures, my favorite part about watching their videos is that they are always the perfect complement to my meals. I don't know how, but it always happens that my meal ends at the exact minute the video ends. No matter the length of the videos, every time when I'm on my last bite, their videos end, and I'm not even changing my pace for their videos but somehow its always in sync.

Country Fried Steak is a specific thing. It’s a tougher cut of beef “cubed” meaning mechanically tenderized, and then breaded and deep fried like fried chicken. It’s adjacent to schnitzel but more heavily spiced and usually covered in white gravy.

It's directly descended from schnitzel. Immagrants from the Austro-Hungarian Empire to Texas invented it. Beef was cheeaper than pork at the time because it was local and plentiful.

@@bradleyheck7204 sure yes, it was part of that history. But Country Fried Steak was prepared differently than what would become Pork Tenderloin Sandwich. One is very close to Schnitzel, and one is a beef product breaded and heavily salted after the cubing process, and with a milk gravy. That was my point.

@@bradleyheck7204 yeah, we don’t really do Wiener Schnitzel in the southern states. We use mechanically tenderized beef, breaded and deep fried, and then covered in milk based roux gravy. It’s similar but not the same thing.

@@lee32476 I'm an American. I'm from West Virginia. I've been to Germany and Austria. I've had them both many times. They are extremely similar, I assure you. It's tenderized, battered fried meat and it isn't that unique in global culture. Pork Japanese Tonkatsu. Beef Vanillerostbraten, also from Austria. Veal Milanese from Itally. Pork Kotlet Schabowy from Poland. CFS did not descend immaculate from Heaven. It's a product of lots of influences coming together.

Loveless is an icon. My Dad went to College in Nashville in the mid-70s. He raved about the country ham and biscuits my entire life. When I moved to Nashville 6 years ago, it was one of my first stops.

I'm from a small majority black town in Mississippi, and I have family in LA, TN, AL and there are a lot of food and desserts you would see at a white southern table that you wouldn't see at a black southern (aka soul food) table.

I grew up on Southern food. My dad’s family is from Tennessee and Texas, my mom’s family is from Missouri. My parents were English, Welsh, and Scots-Irish. Lots of gravy dishes, stews and potato dishes, and biscuits at every meal.

I love watching how happy y’all are eating food in the U.S., especially in the South! I was raised on Southern food and I feel so blessed! My mama was such a good cook. It brings a cook such joy to see people enjoying food like you to do. It how we show love in the South. Southern food is very hard to beat, from the barbecue to the biscuits! American food is so full of flavor especially in the South. I’m definitely blessed for being raised and to still live in the South. I can’t wait to see where you go and what you eat next!

Chicken-Fried Steak is my absolute favorite southern breakfast. And for those wondering, yes, it really is steak. It's typically a cheap cut of beef pounded thin, then dredged in egg and flour and fried. It was a way to make cheap cuts taste better and stretch your money. Many places also have Chicken-Fried Chicken, which is just a chicken breast pounded flat. Either way, you top it with good sausage gravy!

the key is the pounding part. pounding the meat will get it rail thing, but also it will tenderize the meat. that's what makes it so soft and mouth-pleasing

If you're not from the US or have never been to the south, if you stop in at any mom and pop shop, diner, something with "country" in the name of the restaurant, this is the type of service you get. Super friendly, everybody knows everybody, they give the best recommendations of not only stuff on the menu, but local places to go. I mean, it's just an experience YOU NEED to have. It is what is truly great about this country, that feeling like you belong or always have a place to land with great food and great people.

North Georgia boy here. Try everything separately then combine as you will. It's polite to make sure you taste everything the cook (Usually the Mom in a family setting) worked hard on individually before combining. Combining means they did a good job at balancing the whole meal. Your mileage may vary, but that is the general manner I was raised with.

“Sausage biscuit burger” is called a breakfast sandwich or specifically a sausage biscuit. The steak is tenderized with a mallet before being battered and fried.

Even by American standards, the traditional American breakfast is a really hearty and over-the-top. I think it was because our history of farmers, pioneers, and ranchers. They really needed a very filling breakfast because they would be doing a lot of physical labor all day and might not get a chance to have a meal until dinner/supper.

We butter our biscuits then put the jam or preserves on top. Try apple butter or pear butter too. It is a preserve or conserve. We don’t eat like that anymore, most save the heavy breakfast for brunch on weekends, but farmers worked from sun up to sun down and they still need a lot of calories and still may eat heavy breakfasts. Most Americans eat cereal, toast or yogurt now.

Yes! Honey, jam, jelly, preserves, butters, gravies, sandwich stuff (eggs, bacon, sausage, ham, cheese, etc). And pear butter is absolutely phenomenal!

Biscuits are an artform of starchy delight! From thick and fluffy, or flakey, and crispy on the outside and soft as a pillow inside. There are so many different styles of biscuits. Also, that country fried steak was tiny compared to the ones in good homemade restaurants in Oklahoma. They are the size of the plate with the sides underneath it and topped with gravy.

Youre right, they dont make the Country Friend Steak like that anywhere else. In Mississippi we have a couple Fried Steak places but theyre more like the one in the video. I go to Oklahoma somewhat often and every time I make a point to go to at least one Country Fried Steak place. The crust on those is big and crunchy, big as the dinner plate, bigger in some cases, they give you enough gravy to drown in. If Oklahoma had a state food it would be the Country Fried Steak followed by the Oklahoma Onion Smash Burger.

I live between Memphis and Nashville, and they’re both pretty easy day trips! It’s so fun seeing y’all experience the deliciousness of BBQ in Memphis and then breakfast at the Loveless Cafe. There’s nothing quite like seeing a mountain of biscuits delivered to your table after you order and realizing all your biscuit dreams have come true.

We call small, local diners in the U.S., "Greasy Spoons" as well. If you are at a gas pump and you ask a local, "Where is a good place to eat?" And they respond, "Up the road a bit is Sal's Diner. It is a great little greasy spoon." You better stop and order whatever they recommend.

@@valarya Pancake Pantry used solid. But when Nashville got discovered a lot of those types of places started churning out less quality food and/or changed owners. Honestly Id put Loveless down in that category. It was AMAZING when Anne Loveless owned and Carol Ellison (the biscuit lady) cooked . But Ellison died and it was sold to some business tycoon; it has NEVR been anywhere near as good. Arnold's was THE BEST but Covid killed it. Might give Barbara’s Home Cooking in Franklin a go.

Biscuits, waffles and pancakes..always butter first while it's hot so it will melt. Then add jelly, jam, preserves or syrup. I imagine the original owner's last name was Loveless. The owner's name may still be Loveless. 😂

To get a chicken fried steak tender, you want to use a cuber which is a type of meat tenderizer that has a bunch of tiny blades that make hundreds of mini cuts on the steak. This ensures that the muscle fibers are all super short. It can make basically any cut of steak feel super tender.

I grew up about a 1/2 hr west of this place. My grandma and the people at our little church made biscuits as good or better than the ones you just ate. When the church had a "dinner on the ground" each spring, it was amazing. Food like this plus fresh local ham and beef on table cloths laid on the church grounds. Plus all the sweet tea you could drink. It was incredible.

Love watching you guys. When eating the biscuits, break them in half then put butter on first then the jam on each half. That's how we do it. It's delicious. Homemade biscuits are the best. Also, butter and syrup on the waffle.
