Oh my god you’re using Shawn’s honey this is amazing! You should try out his tangerine blossom when it’s in stock! I made a triple Berry and some traditional with it, it’s awesome as is all of his honey for real!

you can also use sodasteam to carbonate with that new head

I’d say that would give immediate carbonation but I wouldn’t do that and then bottle the brew.

I experimented with one of my fortified meads , I'm learning forced carbonating so I took a one gallon keg and carbonated a butterscotch mead. Had a small get together and had a very grand time. The Mead was a great success. I took a coarse about force carbonating at one of our supply stores (wine and spirit). Had a very interesting experience.

With some more time, the ginger will probably fade away. I used 3 times as much ginger in my mead and everyone who tasted it at the stampede said they could not taste the ginger very much. But then again the judges at Orpheus said it was too gingery, so, yeah, I don't know...

You should try that recipe with basswood honey. It's naturally sweet and minty which your flavor bible shows mango ginger mint papaya.
