A lot of times if the name of a dish starts with a person- in this case a couple- it refers to the original creator of the dish, like in Ma Po Tofu, Ma Po means ‘granny with pockmarks’, the old woman who supposedly first made this dish and became famous for it

Yes, the waiters in many traditional street restaurants are the owners. There is no need to transfer the labor-capital conflict to the conflict between workers and consumers through tips.

When the waiter hands you chopsticks with both hands, it shows that he respects you very much. The Chinese tradition is to pass things to others with both hands, and the person receiving the things should also receive them with both hands.

I think it's more about politeness. If you're a paying customer, you don't necessarily have to return the gesture. But if you're a guest or a friend is treating you, then you definitely should return the favor.

@@MoonKana Chinese people generally believe that customers and businesses are equal in personality, there is no high or low status, customers pay money = businesses pay products. When others respect you, you should respect them in return.

I agree on the former reply, receiving with both hands is a sign of respect, but not doing that doesn't mean anything offended, especially for people don't have local culture background. Just receive it with a word "Thank you" or "Xiexie" would also do.

Westerners always struggle with chopsticks mainly because they hold it too low below the midpoint. Hold chopsticks above the midpoint, about two-thirds up, for better leverage.

实际上,那是一个简写,一对夫妻的小店用内脏等食材制作的拌菜,食材实际上不包括猪肺或者牛肺。内脏因为有异味制作为好吃的食物很难,曾经非常便宜,现在因为制作方法公开,而且有人有特殊的技巧能做得更好吃,所以现在内脏已经不是一种便宜的食材了。实际上是废(废弃),肺的读音和废同音所以导致演变为这个名字

Sichuan basin is very humid, especially in summer time. In Chinese medicine, humidity can invade human body and cause various health issues. Sichuan pepper and some other spices, which give you the spicy numbing sensation, can help mobilize your blood circulation and get rid the humidity form your body. If you cannot handle spicy food that well, you can ask the vender to put less spices in the dish by saying 'wei la' (微辣), and you can have some cold yogurt which can also neutralize the burning sensation.

There are 56 ethnic groups in China, and each has its own traditional food. Among them, the Han people generally divide their food into eight major cuisines, each of which has a different flavor and ingredient combination, Sichuan and Hunan cuisine are mainly spicy, the other six cuisines are not spicy, even southern Jiangsu and Shanghai people like to eat sweet.😊

@@TwoMadExplorers I appreciate your spirit of exploring the food of different cultures. Most of the couple's lung slices are made of dried tofu and beef. The price of pig offal in China is much higher than the price of pork.

夫妻肺片这道菜,是一对夫妻开的熟食店,他们将店铺里面卖的牛肉,在切的过程中产生的一些不完整的牛肉,用红油和辣椒等佐料拌匀之后,形成了这道菜。这道菜收到了欢迎和喜欢。夫妻肺片的音调应该是“夫妻废片”。是四川一道很经典的红油辣椒特色的凉拌菜

I vaguely remember that the original dish name was Husband and Wife leftover slices “夫妻废片“, and the modern menu changed “leftover 废’ to "lung 肺" with the same pronunciation. The origin of the story was that in ancient times, a couple used leftover meat or offal from mainly beef from various restaurants to make delicious but very cheap food. Although this presentation wasn’t that great, the same ingredients mixed together make it more delicious. There was no lung in the dish at all😂

The level of trust that Luke has with Naomi is amazing. No pause at all when she offers him a crunchy pea right after pulling out a Sichuan peppercorn. I was almost expecting her to be setting you up for a viral video moment. Haha The food looked amazing and I would have a hard time not ordering everything.

Couple lung slices is actually not lung , it’s a mix of beef, I also don’t know why it’s called that as a Chinese lol maybe it’s from some sort of story

Originally, the ingredients used were all unwanted by others, so it was called "waste slices",in chinese,废. However, because it didn't sound good, it was changed to "lung slices",in Chinese 肺.

If you have chance to be in another sichuan restaurant, show this to the waiter: 回锅肉,麻婆豆腐,宫保鸡丁,辣子鸡丁,水煮肉片,蒜泥白肉,口水鸡,椒麻鸡,拌牛肚。。。These are the signature dishes, I can't let you leave China without trying them. And if you should definitely try 西红柿炒鸡蛋 (tomato scrabbled egg) at any restaurant. I never met a foreigner who doesn't like it.

in China many street foods should be eaten while it is still hot and is delicious, but maybe it is another taste when it becomes cold, so the lady tried to remind you eat when it's hot. we Chinese people are very kind for foreigners.

I hope you have a great time in Chengdu!The couple lung slices you eat have nothing to do with real couples, haha. Most of them are braised beef and beef tongue, then sliced. There are also many, many delicious foods recommended to you: fish-flavored shredded pork(yu xiang rou si), Kung Pao chicken, and ice powder(a snack canrelieve spicy)....

In the Chinese dining culture, they share pretty much everything, which is very different from the western customary. So unless you’re ordering rice bowls, the dishes are meant to be shared among the group. You’d notice sometimes each person would have their own bowl/plate so they can share. This means you don’t always order the same number of dishes as the number of people at the table.

Wow that first restaurant was where I stopped when I went in June. Almost the same time! They offer free fresh soy milk and hot tea. They are a mixture of beef, tendon, cheek, and stomach. The original one does have lungs, but not any more. The powder on the dessert is probably roasted soybean powder.

Glutinous rice cake is basically the basic ingredient of mochi (which is glutinous rice pounded to be more chewy). Chinese love glutinous rice and have it in many different types of dishes both sweet and savoury versions.

The dessert which Singaporean sent,is made by sticky rice. It taste sweet,because the sticky rice be made to flour dough first,add a little sugar into the dough. And the powder on the surface,usually be peanut flour.

It looks delicious, isn't it? But it has a horrible name: Husband and wife's lung slice!But, Where does the name come from? In the 1930s, there was a married couple in Chengdu famous for making beef slices. The husband,Guo Zhaohua,and wife,Zhang Tianzheng,were particular about the beef slices they made, and often experimented with new ingredients. As a result,their beef slices had a distinct taste from the other beef slice vendors, and their business boomed. In fact, the original name of this dish is "夫妻废片(husband and wife waste slices)", not (肺)lung slices. The meaning of"废" is waste parts or offal. The lung could be a part of this offal but "fei" is not lung by itself in this dish's meaning. The reason is very simple, because the main ingredient of this dish is cattle offal piece (beef scalp, beef heart, beef tongue, beef tripe, etc.), followed by beef slices, with peanuts as the auxiliary material, with chili oil mix. After the public-private partnerships,Guo couple thought Fei(废)was not a very nice word,but it was easily recognised as the the word of ‘“lungs(肺)”,so register as“夫妻肺片" . To suit their customers' tastes, the couple made many improvements on the dish,and offal slices were eventually replaced by various beef or lamb slices. "Sliced beef and ox tongue in chili sauce" is more common now. Foreigners who have eaten the couple's lung slice have praised it, and gave it a very modern English name, called "Mr. And Mrs. Smith".😂😂😂🤣🤣
