One Piece stopped making new endings for a large number of years. Its only recently that they started making new ending songs. Thats why you see a substantial jump in animation quality near the end of the reaction.

That ending that had no credits. You can watch usually on the movies or on the DVD that they come out on. It's called a creditless video. It's it's the actual ending but they just don't show the credits. It's for people who want to record it and put it online usually it's also the ending that shows like all the costumes that they've worn and changed into up to that point. Some people get confused by it

You might not enjoy the first ending, but to fans it is fantastic and perfect for the start of the anime. Not much happening in the video just easing in the characters one by one. And the song is emotional and motavating I always get a little teary eyed when I hear it. The one without credits as far aa I can see it was the ending from episode 231-245. Ending 16, the one where it was mostly the boat and their silhouettes is amazing if you know the context, especially that the song is called Dear Friends. The change/jump in artwork makes sense, there is almost 800 episodes between ending 18 and ending 19.

I’m not sure if all of them do because I switched from watching dubbed to subbed like 300 episodes in, but the ending songs have English versions in the beginning when you watch dubbed!

When it comes to the anime, you may want to try out the Live Action first. It's a good sign of the things to come in the anime. And, honestly, though there's things the anime handled better, the overall quality of the anime in the early seasons aren't as good as the live action. Buuuut, the anime did handle some things better. Like how Usopp(long nose) was handled, for example.
