Inside the Off-Grid Life: Borscht, Sizzling Steaks, and Pure Resilience!

Life off the grid is not just a challenge, but an art form. An essential part of this life is traditional cuisine, which brings people together and warms the soul all year round. Borsch is a cultural treasure of Ukraine, a source of pride, and a culinary symbol of the country. It’s impossible to remain indifferent to this rich and flavorful soup. There are countless borsch recipes, and nearly every cook has their own. Some prefer borsch with beans, others make it without cabbage, and some add mushrooms. Often, family recipes are passed down through generations with care, and some are even kept secret. Today, we’re sharing a recipe for homemade borsch with stewed pork. Let’s start with a juicy and flavorful steak! Steak in the Oven Ingredients: Pork tenderloin - 500 g Garlic - 2 heads Onion - 2 pcs. Mayonnaise - 50 g Salt and freshly ground pepper - to taste Preparation: Prepare the meat by rinsing and patting it dry. Peel and slice the garlic, and cut the onion into rings. Mix mayonnaise and mustard, thoroughly coat the meat with this mixture, and let it marinate in the refrigerator for 6 hours. Preheat the oven to 200 °C. Place the meat in a foil-lined form, cover with foil on top, and bake for 40 minutes at 200 °C. Remove the foil and bake for another 20 minutes on a rack to form a golden crust. Brush the finished meat with butter and let it rest for 10 minutes. The result is a juicy steak with a crispy crust and an unforgettable aroma! Borsch with Stewed Pork Ingredients: Stewed pork - 500 g White cabbage - 350 g Beetroot - 200 g Potatoes - 380 g Onion - 100 g Carrot - 125 g Garlic - 10 g Tomato paste - 100 g Vegetable oil - 30 ml Sugar - 10 g Salt, pepper - to taste Bay leaf - 1 pc. Fresh herbs - 10 g Water - 2 l Preparation: Peel and chop the potatoes. Bring water to a boil and add the potatoes. Cook for 5-6 minutes. Dice the onion and grate the carrot. Sauté the onion and carrot in vegetable oil until soft. Add grated beetroot, tomato paste, and a bit of potato broth. Simmer for 15 minutes. Shred the cabbage and add it to the pot with the potatoes. Add the bay leaf and stewed pork. Add the sautéed vegetables and bring to a boil. Add salt, pepper, and finely chopped garlic. Simmer for another 2-3 minutes and let it rest for 15-20 minutes. Serve the borsch with sour cream and fresh garlic buns. Garlic Buns (Pampushky) Ingredients: Wheat flour - 350-380 g Sugar - 1 tbsp Salt - 1 tsp Vegetable oil - 2 tbsp + for greasing Dry yeast - 7 g Warm water - 200 ml For garlic topping: Garlic - 2-3 cloves Dill - 4 sprigs Vegetable oil - 2 tbsp Water - 2 tbsp Salt - a pinch Preparation: In a bowl, combine flour, yeast, sugar, and salt. Gradually add warm water and oil, kneading the dough. Let the dough rise for 1 hour. Shape small buns and place them in a greased baking form. Let them rise for another 20 minutes. Bake at 190 °C for 25-30 minutes. Prepare the garlic topping: mix pressed garlic, chopped dill, oil, and water. Brush the hot buns with the garlic mixture and let them soak in the flavors. I've been through ALL the comments before writing this, and NOT ONE person has written to express although this life may seem pristine, robust, healthy and ideal in comparison to many others who may not live such a life (or any longer) within the comments and without of them, it's a VERY tough life on a day to day basis particularly in the winter months. Actually, it's NO less difficult in the warmer months as the workload (and stress for some) pretty much remains the same! But what is astonishingly amazing are the Ukrainian people's strength and resilience to such conditions, preservation and traditions which are a living work of art and history. How do I know this? Because I'm married to a beautiful Ukrainian woman which are lives entails a bit of this as seen in the video (without the cows and horses which make life for us a bit simpler - we did have chickens and pigs but gave them up as that intensified our workload and because we decided to live between three homes in Europe which included Ukraine - but with a massive fruit and vegetable garden when there) when we are visiting our home in Ukraine from our other European residences. We've nothing but respect to people who can endure this type of lifestyle because we also understand and know the hardships of it sometims but of course understand the POSITIVE and PLUS sides of it as well. SLAVA UKRAINI!
