So why do many people find marrow and animal fat disgusting nowadays?

Could be that we learn from our parents. Go back even to the 1950s and families used much more of an animal. Marrow, lungs, brain, hocks , fish purchased whole and beheaded/gutted at home , all processed by grandparents and or parents as the kids watched/ helped. Since the 1970s more and more meat was processes and clean.. Just a theory, my views.

I love fat and cherish every morsel of it. And I only use lard in my pie crust. Sometimes my friend will eat lard right out of the tub like candy, savouring every spoonful, but I can't say I go quite that far.
