The synchronicity is almost as mesmerizing as the artistry itself. Total respect for these hard-working people and what looks like some wonderful dishes. I can't be the only one who's hungry after watching this.
Very nice portion sizes. Not oversized, perfect for actually going straight back to work after lunch. Also, lots of very nice veggies. Wok is really great for veggies.

I have a non stick wok that big but I don't have gas so I'm gonna switch to a stainless steel wok eventually. My woks bottom doesn't look as wide as the real iron ones though so I'm gonna do my research

Portion not that great when he leaves about half a cup of fried rice left in the wok.
Surprised it’s not crazy busy. The dishes look amazing!! And love how these chefs work so well together barely speaking. Great job!!

No se que sabor tendrá esta comida de este gran cocinero pues no he tenido nunca la oportunidad de comer en un JPONES pero si se y estoy seguro que después de degustar estas delicadezas es para relajarse y mantener una conversación en compañía de cualquier gran filósofo de la historia mundial para hablar de la consciencia y el origen del ser humano. I've noticed when the chefs take the fried rice from the wok to the laddle and place the rice onto the plate there seems to be a considerable amount of rice left in the wok. What happens to this rice? Its not put on the plate because the plate is taken to the customer before it can be added? Is it used in the next order? If not, with how much is left, and it seems to be the same amount each time, that adds up to a lot of wasted rice.

I put that issue on my comment here…either they are stingy or they save it for them later. Other Japanese restaurants cleans up the wok to the last plate of the customer….smh!

It's a nylon or silicone rice net. Stops the rice sticking to the rice-cooker, speeds up clean-up and stops the rice burning too much. Also makes the rice pot last longer, since it doesn't need to be hard-scrubbed after every single use.

That’s what I put in my comments here…it doesn’t make sense. Why don’t they just give the last bit of fried rice to the customer plate instead of hiding it away. This place looks stingy either way the rice…smh!

To smoothen it out, because sometimes when you don’t strain them there will be random chunks of egg you can’t get rid of
