Today we were in the kitchen cooking up a storm. I made beef stew, canned some, a big batch of banana bread, and baking powder biscuits. I also canned up some kidney beans. While doing that, one of my kids had a wee little accident with the kitchen sink and overflowed it all over the floor. That led to cleaning the entire fridge so we could move it to soak up all the water. I hope you enjoy coming along!

We boil the Celeriac root in Germany, then slice the entire root "match stick" size and pickle it, same as a pickled carrot method. Very good! A other root vegetable recipe is a compote....cut Rutabaga, Parsnips, Carrots, Leeks, thick french cut style, then boil in chicken broth. Separately make a white Roux with butter and set aside. Flavor the compote with salt, pepper to taste, a little garlic, parsley, heavy marjoram and finish simmering another 10 minutes until everything is done, then add the roux to thicken the compote (if you need more thickener use corn starch slurry). Serve with boiled potatoes and your favorite meat loaf. This is a nice winter dinner, and since you seem to enjoy root veggies, this would be perfect.

This might sound like a weird comment, but I just had to say it. Your video for the pantry tour popped up in my feed, and I clicked cause we're really into trying to store food here in bulgaria- with the whole war scares in Europe. However, I am a single girl (plus an ex) and I do not cook as much, and the rest of your videos are "useless" to me... However, I have had your channel run for about 2 hours now- and I have been doing some graphic work while you're in my background- and it's the most productive I have been for such a long time !!! Your voice, the ambient sounds, the activity... I used to go visit some friends of mine back home, before moving to Bulgaria, and I remember sitting in their living room, my friend's wife cooking in the kitchen, the kids come up to her, and watching your videos sent me back there!! So, Imma go ahead and give my Best friend's wife a call, to tell her I miss ehr and the kids, and subbed to your channel to binge watch whenever I am working on graphic design.... again, weird comment, i hope you're not offended, but srsly- thank you so much !!

I put a head of cabbage in my beef stew. When I was married to my ex husband I started putting it in to sneak in a green vegetable, he didn't like them. I cut it in small pieces and he never knew it was there!

Hi 👋 In Liverpool, UK we typically call beef stew Scouse. It's made with beef stewing steak, onion, carrots, potatoes, beef stock (usually a couple of stock cubes) and seasoning. Scouse is eaten with dry bread to soak up the stock on the plate. During the war when people had to ration food, Scouse was made without meat and was called Blind Scouse. Now though we make stews and throw anything and everything in which is great and so much more filling. Great video, thanks 😊

Celeriac… I wish I could get it grown on my own in Alabama. I am from Europe and it’s a staple in our kitchen. Combined with onions, carrots and parsley we can buy it in little bundles at the store for stews and soups. I miss that convenience. Another great recipe you might want to look into is Waldorf salad. ( made with celeriac and walnuts). I just came across your channel and saw that you got a freeze dryer. I have one as well and I am very happy with it. Celeriac does really good freeze dried to use in stews and soups. My son is military and stationed overseas and I sent him homemade freeze dried food. He told me that he literally felt like he is home in our kitchen when he rehydrated it and ate it. I subscribed to your channel as soon as I saw one video that KZbin recommended to watch. Glad I saw it.

Your beef stew looked rich and hearty, then add biscuits to top it off? Oh my! Do you also have a good recipe for black bean soup? I won't say I take naps but I do find that around 1 pm, a nap comes and takes me, lol! I really felt for you during water spillage; trying to film, canning, making dinner, emptying and cleaning fridge and floor all at the same time, you are pretty amazing girl. Always a fan and yes, I also thought you were saying Elvis! Gotta love a gray kitty.

You've cheered me up! I am 63 and just starting having quiet time/ a nap around 3pm. I do find it very restoring! I go to be very late (addicted You Tuber) but usually don't wake until 9am, getting up 30-60 minutes later. Also, I love working hard where I can, but have learned that at my age, PACING YOURSELF is the key to it all. Thanks for sharing.

For cutting onions wet a paper towel on the side of your cutting board. It absorbs the factor that makes your eyes burn.

My mom said that her father, who farmed in Manitoba from the 1940s-1980, always took a twenty minute nap after lunch. She said he would come in for lunch, lie down on the floor afterwards, and go right to sleep before going back out to work until suppertime/evening. I always say the best thing I ever did when my kids were young was institute “Quiet Time” each day, usually after we’d been out at an activity. It got so that on the drive home from lessons or errands they would ask, “Mom, can we have quiet time when we get home?”, which I would always pretend to think about before saying yes! 😉

I never knew (after over fifty years of biscuit making) why sometimes they came out flaky and sometimes rounded. I love that you taught this to me - rounded edges make rounded biscuits. I will certainly be digging our my sharp cutter again. THANK YOU!!!!!!

I LOVED the swimming goggles LOL Tip, when debubbling, use a wooden or plastic utensil to keep from creating micro scratches in your jars. Those scratches can eventually cause your jars to break.

Try molasses on top of your biscuits with the beef stew. My mom was from Nova Scotia's east coast and she always cooked drop dumplings on top of a beef stew . . broth soaked on the bottom and shiny on the top, our favourite part of the meal and we always had turnips in our stew. Her recipe was 2 c of flour, enough milk or buttermilk to thicken (about 1 c), shortening the size of an egg, 2 pinches of salt and two teaspoons of baking powder. Mix like a tea biscuit dough but no need to roll out. Drop by spoonful on top of gently bubbling stew, cover and don't peak for 15 to 20 minutes. Serve with molasses on the table.

Chelsea i make biscuits all the time. I use frozen butter and grate it into my bowl. No need to break it up with your hands or pastry cutter. Works great every time. Love your videos

it's so funny to me that the Celeriac is as new to you as the celery sticks you used was to me (I don't like the sticks.). When we do soup in my family, our veggies are always celeriac, carrots and leek. We call that "Würzelgemüse" (root veggies) or "Suppengemüse" (soup veggies). All the best from Germany!

My stew is pretty much the same- in the summer i put in a crock pot and cook it all day and in the winter in put it in a roaster and put it in the oven, helps keep the house warm

It's funny to me that you speak about celeriac as it was something new and special:) I live in Czech Republic and it's one of the vegetables we use the most often here. It's not that long ago (10 years or so) that I discovered there was celery as well:).

Chelsea, I wonder on the sloppy Joe mix, if you could just can the sauce, and then brown the ground beef and add it to your sauce when you want to make your Sloppy joes? Kind of like manwich sauce? Would help the texture with the beef.

Try wetting a napkin and lying it beside your onions that you are cutting. The moisture will draw the onion into it and it won’t hurt your eyes! I saw this on KZbin (I don’t remember by whom) I didn’t believe it either but it has worked EVERY TIME!!

I've made pork stew before with dumplings. It was pretty good. I canned beef stew last year. Everything went in raw. The meat is so tender. I love home canned chicken and pork too. Taste so good compared to store bought. Have a great day.

Mmm, stew sounds good! I'm gonna have to make some now! My Mom always grew celeriac in her garden. When Mom lived in the Netherlands growing up, her Dad would get her to make and sell baggies of veggies to freeze and use in soups. They would use grated celeriac, and chopped up celery, leeks, cauliflower, carrots, parsley, and onions. My sisters and I still carry on this dutch tradition, and it's so easy to quick throw together a huge pot of soup. We make quart size bags, and enough for the whole year using veggies from our gardens!

I do the same that you said in the beginning of your video: nap even if just 10min, waking before everyone else to just have one cup of coffee and going to sleep when my daughter does and not be an hour on the phone after she is asleep just closing my eyes and sleeping not looking at a screen.

I thought the googles were a great idea! And, when I eat breakfast, which is only maybe once a week, I have what I called smashed egg toast. The smashed eggs are hard boiled and smashed with butter, salt and pepper. I put that on a slice of toast that has been spread with blackberry jam and add the second slice of toast. Sounds weird, but it is tasty. A co-worker introduced me to them, as she never had time to eat her breakfast after getting the kids off to school, so she threw it all together and brought it with her to work. I've been eating it ever since!

I saw a Utube video where a wet paper towel was placed near the cutting board when processing onions. Tried it, and it worked for me. And I’ve never really liked onions!

Try adding some cabbage to your stew, it adds lots of flavor and bulks up the stew.

I have a trick to cutting onions that will save your eyes and you won't need goggles. Take the onion and put under cold running water. Cut off the root end while under the faucet. Then do the same to other end. I learned this back in home ec. in 1970's Oklahoma. Also Mom Brady tells Alice in an episode of the Brady Bunch. Try it and tell me what you think, please.

Celereac is fantastic as soup with grated cheese or mached potatoes with puree of the celereac mixed very well in the oven with some grated cheese over it and some meat aside . it is a fantastic vegetable to eat.

Hi! I'm a new subscriber and I had a suggestion for the ugly chicken! I use it for chicken fried rice. I don't cook it again, actually, I just marinate it in the seasonings while I'm frying the vegetables and rice and then mix it all together and it gets heated up well and has a nice strong flavor without becoming more stringy and broke down. Thanks for your wonderful content and I can't wait to try that biscuit recipe!

I also do a sweet/salty/savoury combination by putting jam or marmalade on toast then topping it with over easy eggs. People always think I'm strange, but it's really good. I don't understand the problem considering the average person eats the two side by side and has a bit of one then a bit of the other anyway. Loving your channel, especially the goggles. Great idea!

I use celery stalks w/ stew also and add green beans ( frozen) & some stock, gravy mix. I'm not a canner but enjoy watching your sweet informative channel.

Wow, you have great helpers! If you add a couple tablespoons of vinegar to your canning water your jars will stay clear and not be cloudy.

Good job! Everything looks great. I am so glad I am not the only one that starts with beef stew, needs more jars to fill the canner so can something else and then make too much so another canner full...lol. I just got my garlic planted last week...ground is still thawed.

Great video as always! I too grew celeriac. We love it as a salad, like a Waldorf salad with walnuts and apples in it and a creamy sauce. Hi from Manitoba!

Try mashed celeriac (make using your favorite mashed potato recipe but swap out celeriac for potato or go half celeriac & half potato) - it's a fantastic side to grilled fish or scallops!
