do people add if branches to add test data queue item to where there would be a add queue item activity in the production XAML? When I create a test case off of my existing XAML, it invokes the process, so I'm assuming if I want to test the dispatching, I'd need to create a conditional within the original XAML and add some argument to signify this is for testing in test automation vs production run. Is there a better approach?

Another option is to pass value to the workflow from CLI and that name you have to pass to the testdata files or if you are using the queue, then for each environment keep separate queue. Below we can pass sit as the enviornment name and use it for selecting the queue. "C:\Program Files (x86)\UiPath Studio\UiRobot.exe" /file:"C:\Users\Iordache Razvan\Documents\UiPath\StartFromCmd\Main.xaml" /input:"{'arg1':'sit'}"

FYI this video is totally obsolete. UiPath changed how Add Test Data Queue Items works because *this process* was utterly counterintuitive and dumb.
