As an American, I am exposed to many different cultures of food, so I actually don’t care for that diet. American cheese starts as cheddar that has been melted and some sodium citrate is mixed in. Once cooled, it's sliced up and wrapped in plastic. Originally this was done to help make cheese more shelf stable, so American soldiers could save Britain's backsides in both world wars. Mock it all you want, but American cheese on grilled cheese is just the better, smoother, cheddar.

Actually, the American variant is not the only American variant, here's the recipe. Ingredients: 2 slices of bread, the type is your choice. Any type of sliced cheese, could be American cheese, could be Provolone, could even be Swiss if you're feeling crazy, we've got a lot of cheese. Sliced deli (preferably honey baked) ham from your local refrigerator at the grocery. Mayonnaise. Any kind. Doesn't matter. Recipe: Pre-spray with vegetable oil, just in case. Coat one side of each bread slice with a THIN coating of mayo, only enough to allow things not to stick. Put cheese and ham on the non-Mayo side of the bread. Grill until crisp. Optional side: Canned tomato soup, or frozen microwave stir-fry Serve while warm, not hot. Enjoy.
