I mean, the chopstick thing is what I've been doing for years. Yeah, it's probably not a problem if you're cooking one grilled cheese and piping it straight into your mouth while you cook a second one, but if you're cooking a whole family meal and sending plates all at the same time, the steam does make it kind of soggy on one side. Using a single chopstick works pretty good too, and since you're not sticking them into food it takes twenty seconds to clean them all.

Alternatively, you can heat up the plate before you put hot stuff on it to avoid condensation. This also keeps the food warm. 1 minute in the microwave is usually plenty...just make sure not to burn your hands on the hot plate.

I just did this. Slight difference. What also works is literally using some claws (the kitchen ones) and just hold it for 45-1:45. And the extra forks just rinse it’s just crumbs. And I personally use plastic fork.

@@garlottos Roma style is using stale bread or baked goods (last time I used Rosca de Reyes cake). Set up a frying pan with butter (more or less is up to you). Take the bread product(s), halve them, then cut into sections. Deeply soak in milk & put in frying butter. Turn the pieces over until fried (process depends on how you like them cooked). Let them cool off & bon appetit!

Another solution: Cook the bread before putting the cheese on to let the oil/butter soak into the bread and then once you add the cheese all the oil will burn off and leave a nice golden color

I appreciate that you think of this. I do too. But I just make sure I always flip it onto the plate so that the less-hot side is down, and I never have a problem. It only gets wet like that if you slide it off the spatula onto the plate (meaning the side that was just touching the pan is now touching the plate). Hot side up to serve!

This actually turned out to be really good advice. It comes off as a "kitchen hack" but it's almost a necessary part of the recipe, like not putting lettuce under a hot hamburger. Sometimes it's the little things that make the most difference.

Or do what I do. I put the sandwich up on an angle, so it's half on the edge of the plate letting the air flow go underneath!!! Easier than forks or chopsticks 😂

Why dirty a whole cooling rack? Even a miniature rack is more work to store, retrieve, use (on a plate that it might not fit well on), and clean than a couple forks or chopsticks.

Exactly. Bonus option: Warm the plate while waiting for the tosti (as it’s called in Dutch) to get ready. Keeps it crispy and warm while you cut it in triangles and eat them with Dutch / German currysaus.
