This is rich cultural history. It's a shame that often working class lives are sidelined or looked down upon as low brow. These people are carrying on tradition that's an integral part of their communities.

Double Pie and Mash is a great meal, plenty of liquor and smothered in vinegar, my mates can't work it out and don't use vinegar but you don't get the proper flavour without it, when I was a kid we used to go to a pie and mash shop that used to chain the knives and forks to the marble tables so you couldn't nick them and someone had to bring a bowl of soapy water around to wash them, happy days

I seek out local establishments like this wherever I go - they are so much more inspiring to visit than those awful ubiquitous chains like McDonalds, Pizza Hut or Costa which offer the same bland food in premises that all look the same, be they in London or Manchester or Glasgow.

I was brought up on this stuff in South London. My favourite Pie and eel shop was Youngs of Brixton, sadly no longer there now. They made their liquor with the water that the eels were cooked in and it gave it a distinct taste that I have never had since. Always had a double pie and mash and my Nan had eels. The Vinegar was soused with hot red peppers which I still do today. It's just slightly better than Tripe and onions, another of my favourite dishes.

So what is the liquor could you explain ?
@oldproji
@oldproji Жыл бұрын
@@bobdole7292Their liquor, (often referred to as green liquor), was a simple parsley sauce made from the water they stewed the eels in. It had a distinctive flavour that I haven't tasted anywhere else since. I have tried to replicate it using fish stock, but it just doesn't have the same edge. This food isn't at all complex. It consists of a ground beef and onion (minced beef) single serve pie; a portion of mash potato, and the parsley liquor. The other addition is a shake or two of malt vinegar that has had hot chili peppers steeped in it.

I am a typical Englishman, and I LOVE pie and mash. But coming from the North East, I am a stranger to liquor, but not averse to the idea. We normally had rich onion gravy with ours. I like parsley sauce with fish, but never had it with pie and mash. I also love Minced beef and crispy baked dumplings too, that was always a favourite for my family growing up. And mum used to make the lightest, fluffiest, crispiest dumplings. We have lots of traditional dishes that are considered to be bland, or stodge by many critics. But in my opinion, they are not bland at all, and they are also so satisfying, especially during winter months. And such dishes are what fuelled the empire, and industrial revolution, so there is a lot to be reversed about the humble English cuisine.

My first ever trip to London was in the early 90’s and immediately after getting off the plane we were starving so the Ritz Carlton doorman got us a cab and said that for our first meal we had to take a bit of a ride to F. Cooke for pie and mash. It was the most delicious simple food I’ve ever eaten and the memory still sticks with me from those years ago. I will say I am NOT a fan of the eels however lol. Good lord that’s an acquired taste !!
