Ultimate Breakfast Eggs
Serves 4
Prep time 10 minutes
Cooking 12 minutes
Ingredients:
3 potatoes
3 carrots
3 tablespoons olive oil
1 tablespoon Salt
1 tablespoon coriander powder
1/2 cup sliced onions
100 grams cheddar cheese
4 eggs

Method:
Peel the carrots and potatoes. Grate them and squeeze to remove excess moisture content. To this add the onions,coriander powder,salt and fresh coriander. Add in the eggs and mix together to form a mixture.
Bring 3 tablespoons oil to heat,add in a layer of the egg mixture,allow to cook for 2 minutes. Add in the cheese and a further layer of the egg mixture. Cook for 4 minutes covered with a lid. After that use the lid to flip the omelette over and cook for a further 6 minutes on medium heat covered.
Allow to rest for 2 minutes prior to serving.
Serve hot.
