Sweet potato soup
Serves 4
Step 1: the potatoes:
1 kg sweet potatoes diced into small cubes
1/2 cup fresh garlic finely chopped
1 tablespoon olive oil
50 grams butter
1 tablespoon salt
1 teaspoon sugar
1 cup celery chopped
1 tablespoon Worcestershire sauce
Whole spices (1 whole nutmeg,1 star anise,1 clove,1 small stick cinnamon) to be added while boiling the soup and removed later
Method:
Heat the oil and add the butter to melt. Add in the garlic and cook till translucent/smell released , add in the sweet potato and cook till lightly browned at the edges. Add in the celery and cook for a further 2 minutes. Now add the Worcestershire sauce, add in some water enough to cover the potatoes and than the whole spices. Cover and allow to cook on low to medium heat for 25 minutes or until the sweet potato can be cut through with a spatula.
Allow to cool. Remove the whole spices and blend the potatoes to a fine paste. Strain the mixture and add water as required to get the right consistency. Simmer for a further 5 minutes and it’s ready to serve.
Serve with garlic bread or baguette of your choice, garnish with cream or coriander.
