Ultimate Cajun Shrimp and Creamy Cheese Grits Recipe
Ingredients:
For the Grits:
1 cup stone-ground grits
4 cups water
1 teaspoon salt
2 tablespoons butter
1 cup sharp cheddar cheese, shredded
1/4 cup heavy cream (optional for extra creaminess)
For the Cajun Shrimp:
1 lb jumbo shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1/2 cup green onions, chopped
1 tablespoon Cajun seasoning
1/2 teaspoon smoked paprika
A pinch of cayenne pepper (adjust to taste)
Salt to taste
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Instructions:
1. Prepare the Grits:
In a medium saucepan, bring 4 cups of water to a boil. Add salt.
Gradually whisk in the grits to prevent any lumps. Reduce heat to a low simmer and cover the pot. Cook for 20-25 minutes, stirring occasionally, until the grits are thick and creamy.
Remove from heat and stir in the butter, shredded cheddar cheese, and heavy cream until well incorporated and smooth. Set aside and keep warm.
2. Cook the Cajun Shrimp:
In a large skillet, heat olive oil over medium heat. Add garlic and green onions, and sauté until fragrant, about 1-2 minutes.
Season the shrimp with Cajun seasoning, smoked paprika, cayenne pepper, and a pinch of salt. Add the seasoned shrimp to the skillet.
Cook the shrimp for about 2-3 minutes on each side or until they are pink and opaque.
3. Serve:
Spoon the warm cheesy grits onto plates or into shallow bowls.
Top with the Cajun spiced shrimp. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
