Cheesy Butter and Black Pepper Grits
Serves 4
Ingredients:
1 cup coarse corn grits (not the instant variety; stone-ground preferred)
4 cups water or chicken stock
1 teaspoon salt
1½ cups grated Cheddar cheese (optional)
½ cup heavy cream or more water
3 tablespoons butter
freshly ground black pepper
chopped fresh chives
Directions:
1. Combine the grits and water in a 3-quart saucepan and heat over medium-high heat. Whisk until the grits have a moment to become suspended in the water rather than sinking to the bottom of the pot - about 3 to 5 minutes.
2. Once the grits come to the boil, reduce the heat to very low and season with salt. Cook, covered but stirring regularly (every 5 to 10 minutes), for 30 to 40 minutes. If the grits become too dry, whisk in a little more warm water and continue to cook. When fully cooked, the grits should be tender and creamy.
3. Stir in the cheese, heavy cream and butter and season to taste with salt and lots of freshly ground black pepper. Let the grits cool to an edible temperature. Sprinkle chives on top and serve.

In the south we wash our grits to get rid of the black specs and dried chafe. Just fill up a big wide bowl with your grits and swirl and these bits will float to the top and then pour off with the water into the sink. Repeat this a few times. Highly recommend this for all kinds of reasons.

Your grits have some texture is not because they are stoneground it is because you did not cook them long enough to get the smooth texture which some prefer. I cook mine in pressure cooker with 4 to 1 ratio. 30 minutes. Put bowl with grits and water in bowl and place in pressure cooker with water in bottom of pressure cooker. Then put lid on and in 30 minutes at medium pressure or setting for wheat.....you will have perfection. Add you cheese or whatever else you like at that point. Also keeps them nice and warm in the pot.

Can I use corn ground as polenta?

you can use polenta. It's a fine ground so won't have same texture as coarse like in this video. It will still taste good
