The addition of yogurt adds a subtle tang, while the finishing touch of fresh coriander brings a refreshing note to this savory delight. Ideal for pairing with roti, naan, or rice, this dish is sure to become a family favorite, perfect for any occasion.
Chicken Garlic Curry Recipe
Ingredients:
2 tbsp ghee (clarified butter)
100g peeled garlic cloves
3 tsp coriander seeds
2 tsp cumin seeds
5-6 green cardamom pods
6-7 cloves
10-12 black peppercorns
2 black cardamom pods
A small piece of mace (javitri)
2 medium-sized white onions, thinly sliced
50g cashews
3 tsp poppy seeds
2 tbsp yogurt
1 cinnamon stick
2 bay leaves
2 star anise
5-6 dried red chilies
1 kg chicken, cleaned and cut into pieces
2 tomatoes, finely chopped
Salt to taste
Water or milk as needed
Fresh coriander leaves for garnish
Instructions:
Start by heating 2 tablespoons of ghee in a pan. Once the ghee is hot, add 100g of peeled garlic cloves and sauté until golden brown. After the garlic is browned, add 3 teaspoons of coriander seeds, 2 teaspoons of cumin seeds, 5-6 green cardamom pods, 6-7 cloves, 10-12 black peppercorns, 2 black cardamom pods, and a small piece of mace. Sauté the spices over low heat until fragrant.
Next, add 2 medium-sized thinly sliced white onions to the pan. Cook until the onions soften slightly, then add 50g of cashews and continue sautéing. Cook the onions until they become more tender, then add 3 teaspoons of poppy seeds and sauté for another minute.
Transfer the sautéed ingredients to a blender, add 2 tablespoons of yogurt, and blend into a smooth paste. If needed, use a little water or milk to help blend the mixture.
In the same pan, heat another 2 tablespoons of ghee. Add 1 cinnamon stick, 2 bay leaves, 2 star anise, and 5-6 dried red chilies. Once the spices start to crackle, add the chicken pieces and sauté until browned. Season with salt to taste, then add 2 finely chopped tomatoes. Cover the pan and cook until the tomatoes break down and the mixture dries up a bit.
At this stage, the chicken should be about 60% cooked. Add the blended paste to the pan, mixing well with the chicken. Cover and cook over low heat for 5-7 minutes, stirring occasionally. If the gravy is too thick, you can add some water or milk to reach your desired consistency.
Once the curry is done, garnish with freshly chopped coriander leaves. Serve hot with roti, naan, or rice. Enjoy your Chicken Garlic Curry!
