I've been buttering my grilled cheese incorrectly the whole time. Spreading melted butter looks so much easier than trying to spread refrigerated butter with a knife. Just upped my grilled cheese game

l don't think salt kills yeast by changing the PH of the solution (because table salt's PH is 7) but it kills it by generating a celular-threatening osmotic pressure that drives the water from the yeast's cells out into the solution, causing their demise. Other than that small detail, good video. :D

Ben didn't say kill, he said denature. Salt is hygroscopic (google doesn't know that word ._.) inducing osmotic pressure due to the water being sucked out. With a large enough amount it would kill the yeast, but with a smaller amount it would simply slow it down. Basically adding it to the yeast directly would mean it rises less.

Lovely recipe! I've been wanting to bake more bread, and there's no better way to make use of good bread than a grilled cheese sandwich. Maybe French toast, but I bet that this bread is brilliant for that as well. On a more sciency note...How does salt affect the pH? I thought that sodium chloride (table salt) dissolved in water, in any concentration, remained around pH 7, which is why it's quite handy when used in a medical or laboratory setting (which I'm more used to than a culinary environment, I'll admit). I can buy that the salinity may affect the yeast, but I struggle to grasp how that small amount of salt could affect the pH and the yeast. Anything I've missed?

That's exactly what I was thinking while watching this video until the bread was baked and I got totally amazed! From what I remember, Sodium Chloride when dissolved in water should form a neutral solution. So I doubt that's the reason why salt and yeast don't go together....?

Yeah, the loaf kind of dazzled the disgruntled scientist in me as well ;) If only that worked on my professors during presentations. "Hm, that doesn't seem right..." * whips out magnificent loaf of bread * "Well done, A+ indeed!" Exactly, so it's probably rather high salinity that would upset the yeast. Still, a teaspoon dissolved in that amount of water shouldn't affect it that much...

Glad, I wasn't the only person who caught that :) Sometimes high salt concentration can denature proteins (salts can be used to precipitate proteins out of solution in lab), so I guess, it could denature yeast proteins, too. I wonder what the critical concentration of NaCl solution is for the yeast to be affected at all.

I haven't read the entire article, so I'm not sure what concentrations they've used, but maybe that's what Ben was getting at. Still not pH-related, per se, though. I'm also not sure how much salt you would have to add before killing off the yeast. NaCl changes concentration of solution, not pH. Here's why: Table salt (NaCl) does not change the pH of a solution. pH is simply a measurement of hydrogen ion concentration (H+), which is something NaCl does not alter. One reason why salt solution can kill the yeast is because osmolarity or concentration differences. Adding large amount of NaCl will make the solution hypertonic, which will result in the yeast cells to shrink. This is also the reason why we use a very specific concentration of saline (0.9% NaCl solution) in the hospital for IV fluid replacement/drug delivery/etc. Come on, Ben! You know better than this.

The key is to spread mayonnaise on the outside of the bread. It kicks butter's ass, no joke. I was not convinced but it really does put a lovely crust on the bread.

Leila Kinsella Strong flour is actually different to both plain and self-raising. It's also sometimes called bread flour. It's closer to plain flour, but has a higher gluten content so you won't get the same result with plain!

Leila, I found strong flour in Woolies a few weeks back. It's Lighthouse brand and is in a box, with all the other flours. Maybe not all Woolies have it but it's available in their online store. On the front it says STRONG BAKERS FLOUR. Otherwise I would try an Italian store if you have one locally, they usually stock it too.

I'll have to try that bread recipe sometime, and mustard and oregano are great ideas to add some flavor to the sandwich. Recently a friend of mine let me know she uses mayonnaise instead of butter for pan frying a sandwich like this and it actually works really well. Also muenster and mozzarella make great grilled cheese sandwiches, I recommend trying them. A common complement to grilled cheese in the US is tomato soup which is good, but adding basil or oregano to the soup makes it even better. Just some friendly suggestions, if anyone is interested!

The pH comment made my skin crawl. Come on, Ben. You know better than this. The only the thing salt solution would do is crenate the yeast cells. The only way proteins in the yeast would be denatured would be if the electrostatic interactions were to be disturbed by a higher tonicity due to more ions being present in the surrounding solution. The pH wouldn't be changed at all, and I'm just sitting here frowning my face off after having lost complete faith in Ben's super geekiness. Tears will be shed today, SortedFood. :'(

Ok, everyone has different tastes and is open to their own opinion. I did not get this from buzzfeed, but my grandma, whose been making me grilled cheese since I was little. A great tip I picked up from someone else's cooking video series (I can't remember whose now) is to sprinkle just a little bit of cheese on the outside of the sandwich when it's almost ready, then flip it over so the cheese cooks and sticks to the break. Do it to both sides.

Great recipe! I'll have to try the bread and see if it makes a difference in my grilled cheeses. I like to use sourdough bread and extra sharp cheddar for my sandwich, and I'll use a cast iron skillet or griddle to fry/grill it. Also it's a little easier to used softened butter instead of melted butter, and for a crunchier crust, mayo instead of butter!

My ultimate grilled cheese: Sourdough bread buttered on both sides, muenster cheese (a couple slices on each piece of bread), a bit of roast beef and caramelized onions. Put in a pan for a few min on each side till toasty and golden and the cheese is melted and the beef and onions are heated through. Its like French Onion soup but subbing the roast beef for the beefy soup. SO GOOD

I did my sandwich in a batter before grilling them/putting them in a pan. One egg, very little milk, oregano and black paper. I put a cheese slice in the bread and then dip the bread into the batter and then put it into a pan. And put the leftover batter in the pan next to every side of the sandwich and then plaster the sandwich. It tastes great

Love the grilled cheese. I had never thought of adding seasoning to grilled cheese. Will have to make this on the weekend with Jamie Oliver's tomato soup. One side note: if you have an extra 15 minutes when making your bread, mix 3/4 of the water with the 3/4 of flour (the specific name for this escapes me right now) and then add 1/4 of the water and 1/4 of the flour with the yeast (sponge). Allowing the majority of the flour to mix with the water before adding the yeast gives a better taste in the bread, at least in my experience. Its an extra step but I do it every time to enhance the flavor of the bread. My favorite weekend treat is making bread.

Something that I found that makes this soo much tastier is if you melt some butter but to the point where it's still kind of Solid not all the way liquid then take lemon pepper garlic pepper red pepper and like 3-4 splashes of lemon juice and spicy mustard it makes it tastes soooo freaking good I'm eating one right now haha also u can add bacon and tomatoes

Add a dusting of parmesan cheese to the outside of the bread before you grill it. Super important that it's a dusting and nothing thick, otherwise it burns weirdly. But it's an AMAZING addition to the classic.

For fun at parties: Earlier this year went to a party where they had tomato bisque in a shot glass, with a grilled cheese sandwich bite resting on the shot glass for dipping and sipping for ease of eating. Was a fun twist on party food that wasn't super pretentious looking, and the taste of comfort food in a compact transportable format for mingling!

Okay, so this is not as much a comment on food as it is something I need to share with you guys! Normally I watch your videos the day you upload them... But I've been quite busy and must admit that for almost a month I haven't been watching any videos!!! (I know it's horrible!) So last night I had a dream. I was at a big KZbin festival where all KZbinrs was getting together cooking, doing makeup, DIY's, etc. As I walked into the YouFood area I saw this big shiny yellow S sign! I was so happy and jumped over there to see that Jamie was there greeting people and all the rest of you guys in the back making delicious foods. Do I need to say that I had a lovely morning making the perfect grill cheese sandwich? And I'm almost updated on your videos:) I love following you guys and congrats on the 1.000.000 mark xxxx

I like to spread the inside of one slice with mustard and the other with mayo and if I have ham slices on hand it'd insert it between two layers of cheese. It tastes awesome.
