just did this to cook stuffed Jalapenos in that sweet spot, (near the hot zone but not on top) and then put my cast-iron skillet to cook bacon on the hot side after.

When I use to use charcoal on my Weber I found that lump charcoal was just way too inconsistent in size and even the wood that they use (which could be different even in a single bag), that’s why I stuck with briquets (I currently have a pellet smoker and a large gas grill).

Every gas grill i ever owned burned everything and had major problems controlling temps, so went wood pellet and never looked back.
