Ingredients:
1. Black-eyed Beans 159g : These form the base of the Moi Moi. The beans are soaked and de-skinned to create a smooth and creamy texture when blended.
2. 2 Medium Onions: Onions add a robust flavor and aroma to the Moi Moi. They are blended with the beans to enhance the dish's taste.
3. Red Bell Pepper (Paprika): Provides a subtle sweetness and a vibrant red color to the Moi Moi, balancing the heat from the scotch bonnet peppers.
4. 2 Scotch Bonnet Peppers: These spicy peppers add a fiery kick to the dish. They are a signature ingredient in many Nigerian recipes, known for their heat and flavor.
5. 1 Jumbo Cube (Seasoning Cube) This seasoning cube is essential for adding umami and depth to the Moi Moi, bringing all the flavors together.
6. 4 Boiled Eggs (Optional): Eggs are a popular addition, offering a protein boost and a delightful surprise within the Moi Moi. They can be added whole or sliced before steaming.

Preparation Steps:

4. Incorporate the Mackerel and Eggs: Gently fold in the flaked mackerel fish. If using boiled eggs, you can either mix them into the batter or place them whole in the Moi Moi mixture after pouring it into the foil wraps or containers.
5. Steam the Moi Moi: Spoon the Moi Moi mixture into foil wraps, containers, or banana leaves. Seal the foil tightly to prevent water from entering. Place the wrapped Moi Moi in a steamer or a pot with a steaming rack. Add water to the pot (enough to steam, but not touch the Moi Moi), cover, and steam for 45 minutes to 1 hour. To check for doneness, insert a toothpick; if it comes out clean, the Moi Moi is ready.
6. Serve and Enjoy: Once cooked, allow the Moi Moi to cool slightly before unwrapping or removing from containers. Serve warm with rice,or Jollof rice or enjoy on its own.
