Ingredients:
For the Dough:
Plain Flour: 3 cups (500g)
Butter: 40g, cold and cubed
Baking Powder: 1 teaspoon
Olive Oil: 1 teaspoon
Pinch of Salt
10g of Flour for Kneading
For the Filling:
Minced Beef: 500g
Chopped Onion: 1 medium-sized
Spring Onions: 1 bunch, finely chopped
Scotch Bonnet (or any chili) : 1, finely chopped
Garlic & Ginger (minced): 1 teaspoon
Black Pepper 1 teaspoon
Jumbo Cube 1, crushed (or use any beef stock cube)
Olive Oil: For frying the filling
Generous Amount of Oil For deep frying the pies
Instructions
Prepare the Dough:
1. Mix the Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, and a pinch of salt.
2. Add the Butter: Cut the cold butter into small cubes and add it to the flour mixture. Use your fingers to rub the butter into the flour until it resembles coarse breadcrumbs.
3. Incorporate the Olive Oil: Add the olive oil to the mixture and gradually add water, a little at a time, mixing until a soft dough forms.
4. Knead the Dough: Transfer the dough onto a lightly floured surface and knead it gently until smooth. Cover the dough with a damp cloth or cling film and let it rest for about 15-20 minutes.
Prepare the Filling:
1. Cook the Beef: In a large skillet, heat a little olive oil over medium heat. Add the chopped onion and sauté until translucent.
2. Add the Spices and Aromatics: Stir in the minced garlic and ginger, followed by the chopped spring onions and scotch bonnet. Cook for 2-3 minutes until fragrant.
3. Brown the Meat: Add the minced beef to the skillet, breaking it up with a spoon as it cooks. Stir in the black pepper, crushed jumbo cube, and a pinch of salt. Cook until the beef is fully browned and any excess liquid has evaporated.
4. Cool the Filling: Remove the filling from heat and let it cool to room temperature before filling the pies.
Assemble and Fry the Pies:
1. Roll Out the Dough: Divide the dough into small balls (about the size of a golf ball). On a floured surface, roll each ball into a thin circle.
2. Fill the Pies: Place a spoonful of the beef filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal. You can crimp the edges with a fork for a decorative finish.
3. Fry the Pies: Heat a generous amount of oil in a deep pan over medium heat. Once hot, carefully lower the pies into the oil, frying them in batches until golden brown and crispy on all sides.
