Hi Andy, it's not really the brand, it's the colour. The darker they are, the better. Some are straw colour and have the least flavour

When it cools down it'll be a lot firmer, apart from that, reduce it by continued boiling on high heat stirring rapidly

Kia Ora Steve. I do not own a pressure cooker. Apart from boiling for 90 minutes, are there any other tips for this recipe (such as chopping the veg smaller)? As you may remember, I am very keen on Northern Indian/Mughlai cuisine.

Hi Russ, yes, that's a good point if not using a pressure cooker, cut your veg as small as possible as they'll cook quicker; it's all going to be blended anyway. Cheers

Personally I use extra hot chilli powder combined with tandoor masala, a great flavour and good heat.

Wonderful Steve and congrats on your awards. I have a question which you cannot possibly answer I feel? Is there a restaurant 'cheat mode'. I just cooked (traditional style) perhaps the best curry I ever made. However....... (Sub note: I know about mango/naga) etc. However the bright colour, meaning the aroma and in fact taste, while not totally missing is not prevailing. It's almost like a hot sauce is added as a cheat. I've tried many owing to my suspicion. Great video, good guy, keep it up. Best.

But I knew I was right. There are noses and noses, tastes and tastes. But I know a good curry when I smell it. Thank you Steve, congrats again 👍
