We used to go red lion because it was cheap, not much spice on the tikka but remember big portions but less on quality

the problem with this method is you are loosing much of the natural flavor of the rice right down the drain! it's okay for making soup when you are keeping the liquid, but not when draining it off down the drain! this hurts to watch!

Using plenty of water is essential when making basmati where you need to get separate grains. Personally, I don't get upset about pooring a little rice water away if it means separate grains.

Hi Steve, I use your old method and I normally make about 2litres worth, I have been using your recipe for the last 7yrs always amazing just one question lately I have come across food guides on storing oil with infused spices, how long can you safely store this oil last thing I want is botulism any advice welcomed regards thanks Nick.

Great to hear that you've been using this oil for so many years. As long as there's no odd aoddor or mold and it's kept in a dark place in an airtight container there's no reason it wouldn't last for at least 6 months.

I would put them one at a time over the hob,but you have to have some sort of of oil on them so they expand,.

This looks really good. I will add though, for anyone who's sensitive to the taste of burnt garlic it's best to add it later, since garlic paste immediately starts burning when it hits hot oil.
