One of my closest friends Jimmy used to work for Raymond Blanc back in the day and he along with Jamie Oliver inspired me to start cooking 25 years ago! Over the years I’ve found Jamie to be a bit irritating at times (haha I’m sure I am too!} but his cooking is top notch always and still inspirational after all these years 👍😉

Jamie Oliver, I have been watching your talent since you were a young man, way before KZbin. Now I watch you as a world renowned chef, husband and father. I am astounded at all your hard work and the man you have become. through the years. I now watch Buddie's talent budding into what I like to call the "Naked Chef 2.0" You should be very proud of him. My mom, which is 83, loves it every time Buddie is on a video and smiles saying that little boy is going to grow up, just like his dad. All the best and most of all stay safe. Always kind of freaks me out when I see people scraping metal tools in teflon pans. Not everyone is a big shot chef who can get a new pan whenever they damage one. :|

Картофель. Как сварить вкусный картофель. Очистка. Обрезка. Специи в первой воде. Специи во второй воде. Картофель промыть. Очистить от кожуры, черноты, зелени если есть и т. д. Картофель должен быть чистым. Промыть. Разрезать по длине произрастания. На две части. Разрезать по длине произрастания каждую из половин, так что бы было проще вырезать сердцевину. (сердцевина - прожилка в середине клубня, её надо удалить, именно она портит вкус). Понадобятся три кастрюли. Поставить кипятить две кастрюли. В первой кастрюле - соль 2 (две) столовые ложки на 1 литр, куркума 1 чайная ложка, перец острый красный по вкусу, перец красный сладкий 1 чайная ложка, перец черный душистый по вкусу, лавровый лист 2 листа, кориандр не молотый 1 чайная ложка, укроп сушеный по вкусу. Это отвар кипятить пять минут, можно более. Затем процедить его через сито в свободную третью кастрюлю. Кастрюлю с процеженным отваром поставить на сильный огонь. Когда отвар закипит, вы положите в него картофель и нужно кипятить до 5 минут. Затем картофель из кастрюли высыпать в дуршлаг. Промыть хорошей, а не хлорированной водой из крана, вся вода при варке должна быть хорошей, а не из крана с хлорированной и кальцинированной водой. После промывки в воде, картофель положить во вторую кастрюлю. Во второй кастрюле к этому моменту должна быть кипящая вода без специй. Варить картофель на среднем огне 30 минут, за пять минут до варки, опустить сито с розмарином в кипящую воду. Так розмарин не попадет в картофель и придаст вкус. После готовки воду из кастрюли смыть, присыпать свежим укропом. Если не соленое, то посолить. Поперчить, это ваше дело. Масло и так далее. Кстати глубокое заблуждение посыпать свежей петрушкой. Портит вкус и не стыкуется. Почему такой сложный рецепт. Все очень просто: картофель травят химией от насекомых, подкормка минеральные удобрения. Соль (соленый первый отвар со специями) убирает много дряни из овощей. Так же, если вы будете так же поступать с мясом, птицей, рыбой - которую купили в магазине, то много-много радости на букву Г не попадет в ваш желудок. После обработки соленым кипятком можно парить, жарить, тушить. Извините сразу все, кто дочитал до конца. Делать или не делать дело ваше. Комментарии писать не надо. Мне безразлично будете вы так делать или по-прежнему варить в мундире.

The best seasoning in these dishes is Jaime scratching away on his pans with metal tongs picking up that nice teflon filled fond. I don't get it, I'm sure he knows about this. Is it something I'm missing? Or are these pans just that incredible?

The newer good quality non stick is not plain Teflon, it’s got harder substances in it like titanium, so you are NOT getting “nice Teflon filled food”. Picking up a sausage with tongs does not require scraping. 🙄

Just a comment in general. Teflon has been around for a long time. It has limitations, and using it outside those parameters can cause significant problems. I mostly get Teflon skillets only, for making eggs. I cook eggs at a lower temperature because I think eggs taste better cooked at lower heat and more slowly. Nowadays, coatings are thicker, and the new titanium nonstick stuff is sturdier. But you can’t abuse it and expect it to last, and it is common sense not to heat it past 350-400 and risk fumes, and not to use metal tools on it. And if the pan gets a bunch of scratches on it, discard it. I don’t think it’s going to harm you if used properly (unless you are sensitive to it).

This actually tastes healthy but is missing something I feel. Umami?? Great for kids maybe. I added mushrooms but next time will also add garlic and bell peppers, as well as using red wine vinegar and honey instead of brown sauce.
