I made this a few days ago. It’s delicious! I’m ready to make it again. I have a sweet tooth and this has lots of healthy sweets like sweet potatoes, apples and pears. Very happy with the dressing also. I know it’s a ‘winter salad’ but I’ll be eating this during all the seasons.

I’ve always been hesitant when it comes to adding apples and other fruits to salads, and I’ve never eaten a pecan that wasn’t mixed in ice cream lol but this looks REALLY good! Definitely going to try! I’ve never even bought kale either so this is going to be a lot of new flavor combos. Looking forward to it though. Kayla hasn’t steered me wrong yet!

Are you a vegan or keto?

Neither. I’m celiac so I eat 100% gluten free but I tend to lean more towards paleo style of eating (grain free, dairy free) 80% of the time. That’s when I feel my best. I don’t like to label or restrict myself to a specific diet though.
