The word "umami" was identified as an independent taste quality by the Japanese researcher Kikunae Ikeda in 1908. It can be literally translated as meaty, hearty or tasty. It means a full-bodied taste, such as is typical of meat, cheese or mushrooms.
Umami is a hyped term in the West today, although most people do not understand what it actually means. Whether this term describes this product appropriately is debatable.
