🛒 Ingredients (3-4 servings):
🔸 3 chicken breasts
🔹 250 g mushrooms (8,9 oz)
🔸 1 onion
🔹 1 clove of garlic
🔸 6 pieces of sun-dried tomatoes in oil
🔹 A handful of fresh spinach
🔸 300 ml cooking cream / media crema (1 ⅓ cup)
🔹 250 ml chicken stock (1 cup)
🔸 ½ teaspoon oregano
🔹 ½ teaspoon basil
🔸 40 g shredded cheese (parmesan or grana padano) (½ cup)
🔹 Salt
🔸 Pepper
🔹 extra virgin olive oil
🔸 60 ml of white cooking wine (¼ cup)
🍳 Directions:
1️⃣ Clean the chicken breasts. Season them with salt and pepper on both sides. In a large frying pan, put a couple of tablespoons of olive oil. When hot, sear the breasts on both sides over medium-high heat (they do not have to be cooked inside). Remove and set aside.
2️⃣ Chop the onion and garlic. Clean the mushrooms and cut them into slices. Cut the sun-dried tomato into small pieces.
3️⃣ Add a little more oil to the remaining oil in the pan and add the chopped garlic. Cook over low heat and, when you see that it starts to brown, add the chopped onion with a little salt. Cook it, over medium-low heat, until you see that it is very poached and almost caramelized.
4️⃣ Raise the heat and add the mushrooms with another pinch of salt. Sauté them. Almost at the end of cooking, add the oregano and basil. Add the dried tomatoes and cook for a couple of minutes.
5️⃣ Pour the white wine and let it cook until the alcohol evaporates (a couple of minutes). Pour in the chicken stock and the cooking cream, mix well and let it reduce for 5 minutes over low heat.
6️⃣ Add the grated cheese, stir to integrate. Add the spinach and mix with all the sauce until it reduces in size.
7️⃣ Place the reserved chicken breasts and cook, over low heat, for 10 minutes, with the lid on (turn them when the first 5 minutes have elapsed).
8️⃣ Serve with a sprinkle of freshly ground pepper on top.
👌 Notes for preparing easy Tuscan Chicken:
🍅If you see that you get too thick sauce, you can add a little more broth.
🍅You can accompany it with some pasta.
🍅If you don't have dried tomatoes, you can substitute them with cherry tomatoes.
