This one is a Cuta-Copter Trident which is arguably the best drone on the market for this style of fishing. The Swell Pro Splash Drone is another really good option as well.

We were on a remote beach south of Perth. Tide can play an important part but for this area there are fish regardless of what the conditions are, so long as its fishable

Sure are! The one bait rule only applies for boats in the West Coast Bioregion.

It's "A maximum of one bait or lure per line when fishing for demersal scalefish" for the West Coast Bioregion since Feb 1st 2023. The statement about not applying to recreational land based line fishers is in regards to the demersal closure dates meaning you can still drone fish in these periods but must comply with the other demersal rules.
