need to see tenderness/juice levels if set and immediately removed at a low and slow heat, that was the combo of tools to ensure you don't waste or overcook a drop

Why did you switch to the Anova during the cook?

just to see if someone would catch it? LOL I had an issue with the Nise wave and was going to have to re-set it and I decided to use the Anova instead to compliment the container..
