Can't wait to see more content using the Simply. I think of it as the Cadillac of deck ovens like this. When I build out my micro bakery space its what I want to go with.

Looks super nice!! Would you happen to know if these types of ovens like simply bread/rofco work for pastries/panettone besides sourdough bread? They look designed especially for sourdough bread so was wondering about how it would work for panettone/pastries..Thanks in advance!!

This oven works great for panettone and for pastries. I baked over 400 panettone in mine in Dec and have been baking pastries weekly. So far we have baked croissants, pop tarts, cookies and they have all worked great.

Why do you switch off heating after steam ? and do you turn it on later ? Can you explain the temperature and the total bake time ?

It's not necessary but the oven connects so you can keep it up-to-date. It also opens the door to future possibilities, including analyzing historical data, checking maintenance schedules, and viewing insights about the bread you've baked.

I don't understand how you make a profit in a micro-bakery when buying a stove that cost $9,000 with all the accessories you got with it. Not saying it's not a nice stove, it is... but it has to take years to get your money back for the investment.

Oh you can easily pay it off in a few months. You only need to sell approximately 60-80 loaves of bread (depending on your ingredient costs) per week to pay off the $9,000 oven in 4 months. If you really want you could do it in 2 months for sure.
