For the reigns....could you use an appropriate brown coloured cross stitch floss thread?

Nice report, I've already admired the painted figures. 😙 Turned out really well. Horses are usually underrepresented in miniature games, which is a shame. Hardly any manufacturer has WW2 horses or horse-drawn carriages.

Are these usable in a game like Bolt Action? Or are they too big?

You can use these for Bolt Action, but your terrain will need to match their increased size. I bought a few pieces of Tamiya terrain kits for reference and will craft some to match in size. Thanks!
