The Egyptian canopic jars each have a different Egyptian god depicted on the top that was responsible for protecting that organ (lungs/baboon, stomach/jackal, intestines/falcon, and liver/human). It was believed that these organs would be needed in the after life. The ones you have there are 19th dynasty style jars according to google. The heart was left inside the body for the Egyptians believed that is where the soul resided.
