he add water because the olive oil has burned out, do so to avoid the rice getting burned too. Thats because olive oil only suitable cook in low heat, but fried rice uses high heat, thats why the oil burned out fast. Idk why some western chef obsessed with olive oil so much, put it everywhere. there are lots of vegetable oil out there that suitable for specific kind of dish. Sometimes these chefs need to acknowledge this

Olive oil having a low smoke point is a myth that's been debunked by any actual scientific studies. The real problem is that he's using a non-stick pan which means he'll never be able to get oil to fully coat the bottom.

Olive oil is only suppose to be used in mediterranean cooking like my country Spain,France, Italy and Greece,we do use it for our national dishes but nordic and english do not know how to use that oil so they put it everywhere. We use both olive oil and sunflower oil in Spain. But English people... omg.... they got 0 food culture.

There are like 8 types of olive oil. The "Virgen and Extra Virgen" is the more commonly known and the most commonly used. The "orujo refinado" have more heat resistance and is usually more use in sauttes and frying. Also depends of the sauce pan you are using. If its non stick the oil will get burned more quickly than if you use a wok for example. P.d: sorry for my English i am italian haha

As a kid I didn't understand why my white friends didn't like vegetables, I thought it was quite absurd. That was until, I went over for dinner once and dayyyyyum... it was then I understood why... EVERYTHING was sooooo damn MUSHY. Boiled to death! OMG I can relate to this! I live in South East Asia (Malaysia, to be exact) and I worked in a five star hotel where we have staffs that are from Europe/America and has never been exposed to Asian food before, and they all told me the same thing: the first time they tasted Asian food, they get surprised by how delicious a vegetable dish can be, and I was like "what do you mean you're surprised that veggies are delicious?"...I guess that's the gap we get, I've spent my whole life eating delicious veggie dishes, and they grew up missing out on it...it's just kinda sad tbh, but I'm glad they had the chance to change their perception about eating vegetables...

you know what's italian and chinese food have in common? some of the dishes may came from simple ingredient, but those ingredients needs to be handle properly by the person who cook the dish. There is a saying simple dish is the hardest to cook. Everyone can make an egg fried rice, but to be delicious is another matter.

I'm an American and I wanna try to defend American broccoli: the idea is to get it *SOFT* and not mushy; it still holds itself but it doesn't have a crunch. Serve it with a bit of butter and black pepper and it's delicious. But broccoli is so finicky that almost no one in a restaurant knows how to do it right and it comes out overcooked and mushy. I don't really like crunchy broccoli but I *despise* mush. You gotta find that balance.

Best oil for fried rice is oil from animal fat (fatty pork fry with garlic) it also make your fried rice smells good but people nowadays don't use it that much because it's not healthy.

So true! I remember as a kid, McDonalds french fries tasted soooo good. Then one day they changed the oil they cooked it in. It use to be cooked in beef fat... not anymore. It's never tasted as good ever since.

Something about Uncle Roger and his background why Malaysian knew Chinese culture. Uncle Roger is a character created by Nigel Ng, he is a high educated modern/young Malaysian-Chinese that became comedian in UK. The character Uncle Roger is base on a stereotype of a "not too high educated" old time Malaysian-Chinese old people, not Chinese from any part of China. U can't find any China-Chinese talk like that, they have totally different accent. Malaysia is a country rich with multi-racial & multi-cultural similar like USA, people there was mostly from other countries like Indonesia, China, India (and many more), these 3 main race's ancestor were all from other countries, they living in that land for over few hundreds years. Only Orang Asli (Native residents) was the original people that already lived in pre-Melaya before everyone else. They were all here in the land when independent day happen, they form Malaysia the country together, and they all preserved their own culture.

After i watch Uncle Roger video, i search it online what is chili jam because never in my life i saw chili jam on supermarket. You know what i found? It is really jam. Not sweet chili sauce. When you made a jam, you used lots of sugar. And that's how to made chili jam (sound really weird for me)

It's ridiculously popular in the UK. My brother and my mum are obsessed with it. I suspect the reason Jamie's used olive oil and chili jam is because they're likely in most kitchens for the target audience. Like, our kitchens are small and I share mine with 3 housemates. I only have room for one oil, and that will be olive oil because a) it is the least likely to form trans fats in the pan, and b) I eat pasta like at least 4 times a week. Fuck chili jam though, it's useless for anything that's not toast. But yea there's not really room to store all these different types of oils and spices that are required to cook every kind of cuisine in the world, and Jamie's big thing is demonstrating what you can do with what you have at home. It usually turns out in messes like this, but hey it cuts down on food waste if you can stomach it.

My recipe. Use Takamaki Gold California Rice after rinsing a dozen times.Use Zoroshi rice cooker. Rice cannot have milky color in water. Sprinkle MSG. Recipe is 1.1 cups of water to one cup of rice. That ok but not perfect. Let dried Shitake mushrooms sit in water for a long time. When water dark brown use that for the 0.1 cups of water. Make sure rice is rinsed at least 8 times. Water needs to be totally clear. I Wushu kick you if you use cloudy water. Let stand overnight. Chop baby bamboo shoots. Diagonal cut Chinese Cabbage with green onion (do not worry green onion also used as garnish). Mince bacon. So wrong, but bear with me. Render your bacon in your wok, when the wok gets very greasy drop in chopped garlic and ginger. With some red pepper. Take pinch of white pepper and sprinkle. One drop fish sauce with big spash of Tamari with a tablespoon of potato starch in measuring cup. But do not use it yet. Drop your cold Takamaki Gold Rice from yesterday in a hot wok, with cold Rice bran oil to complement bacon fat. You did not know rice bran oil existed. Nephew Taij much smarter than you. Cold oil and hot pan does not make food stick. This bald dude on Top Chef taught me that one. Omit carrot. Seems like all fried rice has carrot but it totally sucks. Now when rice very toasty pour in potato starch Tamari and fish sauce. It is called a slurry. A tiny sauce bomb to take it like China's first nuclear weapon. Another pinch of MSG. And another Umami in a tiny amount. I will not tell you what Bonito is. If you use katshuobushi you are very brave. But possibly tasty.

I think people are a bit too harsh on jamie here. I do not remember him saying he is making an original recipe from a specific asian country. Correct me if i am wrong? The only reason i mention this is because my people have a fried rice version that was definitely not copied from any asian country. But it is very similar with some obvious differences in some ingredients that were available (indicionus) in the region at the time of creation of the dish.

Some things just don't even make sense for a pro chef to do. Why does he olive oil the bowl for a dish that's mainly rice? Why does he tear instead of at least cube the Tofu? Why does he put the spring onions in first? These aren't even cultural problems. You don't do any of these things in ANY culture's kitchen. It's like he's purposely doing it wrong.

Honestly he is not a great chef he doesn’t go and try to understand a country Ingredient Singapore using a Italian sausage is a insult it’s like me throwing tofu in a risotto or putting duck breast in a burger .
