Always enjoy the videos :) As of recently i've been using it (amp sim) on background vocal buses and it really makes a difference! Also on reverb/delay buses can add a different dimension too. Obviously all depends on the song/sound you're going for etc etc But try them on everything, you never know what you can find by accident :)
