I don't have any exams but I'm sure you could find some online. I would just recommend completing the study guide for the exam (if you are given one). Also if you have a textbook, do as many exercises as possible from each section that is on your final.

If one did all this book entirely, would he be ready for a Graduate Level Real Analysis course?

In the undergraduate level, there is single variable analysis (this book) and multivariable analysis, which requires a book other than this one. Once you have learned both then I believe one would be ready for graduate level analysis.

I did a review on "Advanced Calculus" by Buck. That book covers multivariable calculus and is more advanced than "Understanding Analysis". I recommend reading that book next.

Is the textbook paper glossy (e.g. nearly waterproof), such as some college textbooks such as Stewart and Freedman Physics?

No, but I know that Linear Algebra Done Right has that glossy paper look
